My new favorite veggie!⁣

I've been eating it for a few weeks. It has the closest texture to potato I've had, if that's something you miss. ⁣

At 2.2 net carbs per 100g, it's lower carbs than cauliflower, radish, turnip, and rutabaga. That same serving has roughly 90-100% dv of Vitamin C. ⁣👊

I've been having it roasted and grilled and plan to try it as noodles soon.⁣

I'm Carolina. In 2014 I was put on disability leave due to my many health struggles. A major contributing factor was my weight (highest reached ~400lbs at 6' tall.) I had been diagnosed with PCOS in 1998 and had no cycle in those 16 years.⁣

Pretty much every s*x hormone and lipid marker was out of range. I had visited an ND for the first time, and she was the first doctor to ever test my fasting insulin that came back very elevated. She suggested I reduce sugar in my diet even though my A1c was normal. ⁣

That sent me down a rabbit hole where discovered low carb / keto. It was a much different landscape 7 years ago! Because there weren't any keto products I was forced to learn to cook real food. What a blessing that was!⁣

I lost ~60 lbs each year for 2 years. Yes, that's 120 lbs lost, but that's only an average of 1.2 lbs per week!!⁣

I never got discouraged. Why? I checked my lab work, my PCOS and hypothyroid healed, I took measurements and progress photos, and I remembered that for the first time, I was improving everything about my health.⁣

Year 3, I focused on improving my hormone balance even more in the hopes of having children. Health wise, I had tremendous improvement, but only lost 10 lbs.⁣

Year 4, I became pregnant with TWINS! I stayed keto with medical approval (excitrment really because my diet is so nutrient dense) and gave birth to healthy full term twin boys in November 2017.⁣

Now I'm pregnant with my third keto baby due April 2021. ⁣

So please embark on keto with the knowledge that it's a journey. If the scale isn't moving as quickly as you'd like, think of all the healing your amazing body is doing. There are so many victories to be had.⁣

Definitely not dairy free. ⁣

I have been making my kiddos strawberry yogurt the last two years. Simply defrost some frozen strawberries and blend with plain Greek yogurt. ⁣

You could use coconut milk or a coconut yogurt.⁣

I had some extra strawberry yogurt and blended in some cream cheese to make Cheesecake Fluff!⁣

Insanely easy. You can and some stevia drops of you want. Make a big batch of you like a daily dessert.⁣

You could blend in a protein powder if you want more protein. Vanilla egg white is prob what I'd use.⁣

I've been into breakfast lately.⁣

Sausage gravy on an almond flour biscuit with some sauteed mushrooms. (Kiddo ate most before I got there.) Eggs + avocado.⁣

The only thing I cooked fresh was egg and mushroom.⁣

Broccoli Cheddar Soup!⁣

Active time involved, 20 minutes. We tossed everything into the Instant Pot 2 hours before dinner.⁣

"Recipe"⁣
1. Whole frozen chicken in the instant pot with 1 carton chicken stock, adobo, salt, and pepper.⁣

2. Cooked for 90 minutes, removed chicken and loose bits ( it falls apart ). ⁣

3. Add 2 pounds broccoli to the broth and manual pressure cook for 10 minutes.⁣

4. While that's cooking, remove chicken meat from carcass.⁣

5. When broccoli is cooked, blend with an immersion blender and add 12oz shredded sharp cheddar. Mix to melt. (Can also add 1/4 cup cream if you like.) Taste and add additional seasoning if necessary.⁣
