Happy Boxing Day!
We had a quiet Christmas Holiday so I wanted to make a late breakfast with my favorite thing… BACON! So I have a pan of it cooking in the oven. (350 degrees for approximately 30 mins) and decided to also make French Eggs. These keep great as a leftover but sadly I was down to my last four eggs. So rather than using a muffin pan for individual eggs I used two round dishes and put two eggs in each. Make sure to spray or butter your dish. Crack egg in and add 1-2 Tbs of Heavy Whipping Cream. Also add a sprinkle of cheese. I used mozzarella and Parmesan. Add your spices. I added dried chives and salt and pepper. Then bake until it’s done to the right egg consistency for you. I like a firm yolk so I go to about 12 minutes. My husband likes a runny yolk so that could be 8-9 minutes.
This reminded me how much I love French eggs so I definitely will be buying more eggs and prepping up a couple containers of them so they can be a take to work breakfast.

Today desperately trying to come up with food for lunch, ended up getting a McDonalds double quarter pound burger no bun with a side of bacon (1.5 pieces). I have got to get some meals prepped.

Anyone do dirty carnivore / ketovore? I’m eating just 25 total grams of carbs each day and added intermittent fasting to just have a six hour eating window. When it gets to be 1pm I devote my lunch. It’s scary how immediately hungry I am when the food is ready. Today’s lunch 1/2lb 85/15 ground beef with 1 pat of buttter. Four thin slices of bacon and a coleslaw salad mix with ranch (which clumped in one spot).

Day 2 of low carb breakfast quiche. This time it’s bacon with a little bit of onion. Yum!

Low carb quiche:
Preheat oven to 350 degrees. Grease 6” cast iron skillet.
Ingredients- makes 1
2 eggs
1/4 C cottage cheese
1/4 C shredded cheese (I use pepper jack or Mexican blend)
1 low carb tortilla
1 tbs butter
2 slices cooked bacon
3 slices Canadian bacon
1/4 tsp dried or fresh chives.
Ground pepper to taste.
Salt if needed (I don’t use)
Directions:
Place tortilla into greased skillet. Add eggs and cottage cheese and mix together.
Chop bacon and Canadian bacon and add to egg mixture. Sprinkle chives and cheese on top.
Bake until egg mixture is solid. Mine takes 22 minutes but I check periodically after 15 minutes.
