Apple Honey Cookies

A very dear friend of mine inspired me to create a recipe as a sweet treat which he could make for Rosh Hashanah . Looking at the tradition of including apples and honey, I came up with this cookie recipe. They are easy to make, healthy, have a soft, cake-like consistency and are rather delicious!

Apple Honey Cookies
A very dear friend of mine asked me to create a recipe as a sweet treat which he could make for Rosh Hashanah . Looking at the tradition of including apples and honey, I came up with this cookie recipe. They are easy to make, healthy, have a soft, cake-like consistency and are rather delicious!

Salads are an easy way to include leafy greens and veggies into your meals. Creating your own salad dressing is so easy, quick to make, and made with good, nutritious ingredients.

This delicious Honeyed Balsamic Vinaigrette is perfect on a simple salad of greens, as a side to BBQ'd or air fryer meats, for a heartier main meal add cut up veggies of your choice, avocado cubes, sliced hard boiled egg and chickpeas or cannellini beans, drizzle this dressing on roasted veggies, as a condiment on sandwiches, drizzled on fresh strawberries... so versatile. It's a lovely, delicate harmonious balance of Honey, Dijon and Balsamic! I hope you love it!

Salads are an easy way to include leafy greens and veggies into your meals. Creating your own salad dressing is so easy, quick to make, and made with good, nutritious ingredients.

Ingredients
1/3 Cup + 2 Tablespoons Olive Oil
1/4 Cup Balsamic Vinegar – I am loving the Costco Kirkland one
2 Tablespoons Honey
1 Tablespoon Dijon Mustard - smooth or grained
2 Cloves Garlic - minced
Generous Pinch of Herbed Seasoned Sea Salt or Plain Sea Salt
Generous Grinds of Fresh Black Pepper

How It’s Made
In a 1 cup jar with a tight-fitting lid, add all the ingredients together. Put the lid on tight and shake shake shake until it is all mixed together well. Alternatively, whisk all the ingredients in a bowl or measuring cup.
Store in the fridge and shake or whisk before using.
Enjoy!

These super easy to make, healthy and delicious lasagna cups are perfect for school or back-to-the-office lunchboxes! They are also handy to have on hand in your fridge for a quick lunch or dinner and they make a fabulous and impressive appetizer. Be creative and make your own delicious combinations. For example; cooked chicken, Alfredo sauce and roasted peppers are an oft requested favourite in our home. Kids love these lasagna cups and have fun helping to make them too!

I’ve been into nostalgic recipes lately! Here is one I love!

Rustic Apple Cake

Prep Time: 10 minutes / Cook Time: 50 minutes / Servings: 8-12 depending on how big you cut slices

Ingredients
2 Eggs
2/3 Cup Coconut Sugar
1/3 Cup Maple Syrup
½ Cup Avocado Oil – alternate: another neutral oil such as Olive or Grape Seed
½ Cup Sour Dough Starter – Alternate: yogurt or milk of your choice
3 Apples, Peeled and Sliced or Chopped – I used Royal Gala and did a combo of sliced and chopped pieces. I’ve also made this with 2 apples and a pear – also very good!
1 Cup All-Purpose Unbleached White Flour
½ Cup Oat Flour
½ Cup Almond Flour
2 Tablespoons Ground Cinnamon
1½ teaspoons Baking Powder
1 teaspoon Baking Soda
½ Cup + 2 Tablespoons Sliced Almonds - alternate: another chopped nut of your choice
2 Tablespoons Demerara Sugar – to sprinkle on top - optional

How It’s Made
Preheat your oven to 350°F.
Line a 9” spring form pan with parchment paper.
Mix wet ingredients together.
Fold in fruit.
Add dry ingredients and mix together to a thickish batter. Add 1/4 cup more SD starter, yogurt or milk if too thick.
Spread into prepared pan.
Distribute additional sliced almonds and sugar, if using.
Bake for 50 minutes and check for doneness.
Cool for 20 minutes before slicing and serving.

Beets. You either love them or you don’t. I didn’t think I liked beets, and would make faces at others who ate them, until I made pickled beets with my mother-in-law. I was a convert! I love beets prepared so easily in this simple salad! In fact, I have converted a few former beet haters with this salad!
