Trying to mark a difference between school days and weekend days by setting up new family traditions. Saturdays are now pancakes days and kids requested their favourite Hulk Pancakes inspired by .
We have no fresh spinach so this time used a couple of frozen spinach balls to the mix. This recipe made 21 mini pancakes which not much of a look in for mum and dad. Whizz up 90g oats, 2 ripe bananas, 90g self-raising flour, 1tsp baking powder, drizzle of vanilla extract, 3 balls of frozen spinach, 2 eggs and 90ml of milk. Pour into a buttered pan and cook for 2/3 mins each side. We added blueberries to ours which added a yummy pop!

Love heart frittatas!!! A quick cheap and fun lunch idea when beans on toast gets a bit repetitive! Mine loved making these. We used a silicon mould but paper fairy cases will work just as well. To make 12 mini frittatas ( they will keep in fridge for breakfast) we whisked 6 eggs with a little milk. We gently fried red pepper, onion and garlic in a frying pan first ( would also be nice with courgette and a little bacon or mushroom) and added a spoon full to each mould. We filled half way with the beaten eggs mixture and added a little grated cheese. We baked on a baking tray for 15 mins until risen and slightly golden. Serve with salad or more beans!

Chuck it all in sausage casserole ! Dice all veg that’s needs eating - here is celery, onion, garlic, carrots, courgette, red pepper and carrots. Add 1tbsp of tomato purée, 2tins of chopped tomatoes, 500 ml stock and can of butter beans / mixed pulses and browned sausages. Cook in oven for 50mins - 1hr. No brain power left for anything other than one pot dishes right now with enough left over to freeze for another day! Stay well everyone xx

Roast root soup -or sunshine soup! Roast carrots, parsnips, onions, and swede ( or frankly whatever veg you have ) with olive oil for 30 mins. Blitz with veg or chicken stock and store in these rather natty soup freezer bags from / amazon. Sprinkle with a few dried chilli flakes / grated cheese.

Happy Mother’s Day amazing mamas!!! Woke up to this beautiful treat this morning - banana waffles!! A great alternative to banana bread using up soft bananas. Mix together: 150 g self-raising flour, 1 teaspoon baking powder,
1 large free-range egg, 240 ml semi-skimmed milk, 1/2 mashed bananas, 1tsp vanilla extract and pour into oiled waffle maker. Recipe makes approx 6 waffles. Absolutely yum. Served here with left over stewed rhubarb and grapes!

Left over roast chicken risotto! This is a great way to use up left over meat and veggies and a great way to get little ones involved in cooking. Recipe feeds 2 adults and 3 kids. Finely chop 2/3 spring onions and 2 cloves of garlic. Gently fry in 1tbsp olive oil. Add 200g risotto rice and heat through. Add 450ml chicken stock. Heat for 5 mins then add a diced courgette and 2 handfuls of frozen peas. Add another 450ml of stock and stir until rice absorbs all stock and rice is soft. Add 200g of cooked chicken and Parmesan or cheddar cheese to taste. A firm family favourite and budget friendly in these tricky times.

Feeling more like my nana everyday and firmly into zero waste mode. Roast chicken tonight will go 3 ways with a mood boosting mini roast this evening, left-over risotto tomorrow and bone broth stock to bag and freeze for an immune boosting soup at some point in the future. Bone broth is rich in minerals that support the immune system and contains healing compounds like collagen, glutamine, glycine and proline. The collagen in bone broth heals your gut lining and reduces intestinal inflammation. It also makes your soups taste amazing! For maximum flavour roast the carcass first in the oven for 30 mins then simmer low and slow for a min of 4/5 hours with some onion, celery, carrot and whatever herbs you can muster. I’ve also added a couple of tablespoons of apple cider vinegar which is meant to aid the release of nutrients from the bone marrow. I will drain and bag this for the freezer. Tomorrow/ maybe Saturday I will replicate a yummy risotto recipe I made at a kids cooking workshop last week with the left over roast chicken - the children at my workshop last week absolutely loved making this recipe So maybe yours may too ###

Such a fun cooking workshop today converting 8 courgette foes into happy fans!! This superstar bunch absolutely bossed our chicken, courgette and pea risotto recipe learning important skills including recipe reading, measuring, weighing, chopping, dicing, tasting and hob safety. Most pleasing was the chefs feedback with all 8 agreeing that their beautiful green and vibrant risottos were ‘really yummy’ and they are definitely going to make again at home, yay.
Parents all agreed that risotto is a great way of introducing whole grains, including all important protein, using up left-overs and adding in the greens! They were pleased and surprised with how easy their children made it look!

I will be teaming up with Pilates instructor Rachel to run a fabulous ‘Nourish and Move’ post-baby workshop. Having a new baby is an exciting though often exhausting rollercoaster. Our workshop aims to offer supportive and practical advice on how to eat and move following birth and prepare you for the next chapter ahead. Super fun stay and play session today with toddlers and pre-schoolers. We shared the benefits of Omega-3 fatty acids and how they are important for maintaining your child’s overall health and brain development. Omega-3 has also been shown in studies to aid sleep quality and improve ADHD and asthma. Today we made Zingy Salmon Balls, children loved chopping chives, grating lemon zest and mixing with mashed sweet potato. Tinned wild salmon is an excellent source of omega-3, kind on the budget and a rich source of calcium too. We all agreed they tasted yummy and made a great Friday supper. Happy half term everyone!

Saturdays are pancake days. Love how the kids requested their favourite Hulk pancakes today adapted from a recipe by the lovely . This adaption used 90g oats, 2 ripe bananas, 90g self-raising flour, 1tsp baking powder, drizzle of vanilla extract, 2 child’s handfuls of fresh spinach leaves, 2 eggs and 90ml of oat milk but any favourite milk will do. Whizz all together in a blender, add more milk if a bit too gloopy. Melt butter in a pancake or frying pan and cook for a couple of mins each side adding more banana slices or blueberries if you have them. Absolutely yummy and a great way of adding the greens in

Super fun stay and play workshop today with the lovely . We chatted to 15 or so busy mums of infants and pre-schoolers about the challenges of feeding your family. We got back to basics and ran through the reasons why our little ones need the vital macronutrients: carbohydrates, protein and fat and the importance of a diverse rainbow of fruit and veg. We had several little ones with dairy and egg allergies which of course makes choosing what to serve our little ones so much more challenging. It was great to reassure the mummies what a wonderful job they are already doing and provide some useful hints and tips to support them further. It was so great to see the teeny ones having fun with food and discovering new tastes and textures. We will be back next week to focus on healthy breakfasts something we all decided can be one of the most challenging meals.
