Need grocery inspo? {keep reading}
It’s so easy to get into the habit of shopping for and cooking the same things each week.
But after a while, these once exciting meals become hard to swallow (literally).
My favorite place to get meal inspo is to see what’s in season!
👉 In season produce tends to not only be fresher and more nutrient dense, but also cheaper too.
If you live in the New York area, here are 6 (of many) in season AND gut-friendly veggies to cook with, save 📌 this for later!
🌱 Arugula — one of my FAVES, arugula is good for digestion, your heart, weight, skin and more! It’s packed with vitamin C, A, and K. You'll also get plenty of calcium, potassium, magnesium, phosphorous, zinc, and iron from Arugula.
🌱 Chard (or swiss chard) — a glorious green leafy veggie (which most of us lack in our diets) is also an excellent source of vitamins K, A, and C, as well as a good source of magnesium, potassium, iron and fiber.
🌱 Green Onions (scallions) — most of my can’t tolerate onions (or a lot of them), green onions or scallions (the green parts only!!) is my FAVE onion replacement. Scallions also grow back on their own! Put the whites you don’t use in a cup of water and watch their magic. Scallions are also great for your intestines, heart, cholesterol, immunity and more.
🌱 Radishes — I love slicing this up and throwing them on a salad for a little ’spice’! Radishes are full of antioxidants and are great for digestion, detoxification, your heart, cancer prevention, blood pressure, and glowy skin.
🌱 Spinach — Another leafy green, spinach is a great addition to any meal. Throw some into your smoothies or eggs for breakfast, make them into a salad for lunch or sauté it for dinner. Spinach is v nutrient dense! Packed with vitamins A, C, K, folic acid, iron, calcium and more!
🌱 Sprouts (aka micro greens) — I 💗 sprouts!! My go-to on top of a sammy or avocado toast. They are extremely nutrient dense and easy to sneak into any meal. Great for fiber, blood sugar, inflammation, weight management, detoxification, blood sugar…. You get the point.
