8 ounces (250 g) bacon roughly chopped
2 tablespoons butter
1 onion diced
5 cloves garlic finely chopped
1 1/2 cups (400 ml) light cream (or for a richer sauce, you can use heavy or thickened cream)
1 1/2 teaspoons cornstarch mixed with 1 tablespoon water cornstarch slurry
1 pound (500 g) broccoli florets, from 2-3 broccoli heads -- stems removed

Vegan Mac and Cheese with Broccoli

1/2 lb. pasta (reserve 1/4 cup pasta cooking water)
1 small onion finely chopped
2 tsp olive oil
1/2 lb. plant based grounds substitute
1 cup broccoli florets cut very small
3 tbsp vegan butter
2 tbsp flour
1.5 cups plant based milk
1 cup plant based cheddar shreds
2 to 3 tbsp nutritional yeast to taste
1/4 tsp turmeric
1 tsp garlic powder
1/4 tsp onion powder
3/4 to 1 tsp kosher salt to taste
1.5 tsp vegan worcestershire sauce
2 tbsp fresh parsley finely chopped

Cook pasta in salted water until just al dente and drain (reserve 1/4 cup cooking water). Set aside.

Meanwhile in a large pan, add the onions and oil. Cook onions on medium heat approx 10 min until translucent, adding bit of water to prevent burning if needed.
Add plant based grounds, breaking up pieces with spatula. Cook until grounds are really browned and crispy, stirring occasionally.

Towards end of cooking, add the broccoli florets and cover, cook until the broccoli is bright green and fork tender.

Meanwhile, in a separate saucepan on medium heat, add the butter cook until melted then add the flour, whisk until smooth. Slowly, whisking constantly, drizzle in the milk until fully added and smooth. Very gently simmer 3 minutes.

Add remaining items in ingredients list except parsley and whisk into sauce until melted. Add this sauce to the pan with the onion mixture, along with pasta. Stir well and slowly add in up to 1/4 cup of the reserved pasta cooking water as desired. Serve, top with parsley.

Recipe (makes 4 rolls)⁣
- 3-4 cups cooked sushi rice (or use sticky/short grain/black rice)⁣
- 7oz (200g) firm tofu - drained, pressed & mashed⁣
- 1 cup (140g) chopped Gailan stems (or use kale/broccoli/sautéed vegetables)⁣
- 1 piece YouTiao (or use fried wonton skins, croutons, saltine crackers)⁣
- 1/2 cup (80g) salted preserved dried radish (or use pickles/relish)⁣
- 1/2 cup finely shredded purple cabbage (or use vegetables of choice)⁣
- 1 tablespoon soy sauce/tamari⁣
- a drizzle of dark soy sauce for color (optional)⁣
- toasted sesame seeds⁣
- oil for cooking, salt to taste⁣

✅To prepare the salted preserved radish, soak them in cold water for 30 mins, then rinse. Sauté them in a pan with some oil for 1 min, season with 1/2 teaspoon sugar (omit if using sweetened dried radish/skip this step if using pickles)⁣
✅To make the tofu, heat a non-stick pan with 3 teaspoons oil, sauté mashed tofu until golden brown & season with soy sauce. Set aside.⁣ Using the same pan, sauté Gailan stems until fully cooked through & season with salt. Set aside.⁣
✅Cut YouTiao into 3-inch long & bake at 350F until crispy, about 5-8 mins. ⁣
To make the stuffed rice rolls, sprinkle sesame seeds on a wrapped sushi mat/cloth & place about 1 cup of rice in the middle of the surface. Using a spatula, flatten it out into a thin layer (if using your hands, be sure to wet your hands to prevent the rice from sticking to them).⁣ Add a heaping spoon of tofu, then top with YouTiao, Gailan stems & preserved radish.⁣
✅To wrap, bring both sides of the rice to the middle & press to seal by keeping the fillings intact. (think of how you wrap a candy) Then, twist both ends several times so the rice roll is packed like a log. Tip: Transfer roll to a wrap, tighten & keep it wrapped while cutting or serving😊

Vegan Stuffed Cheesy Bellpeppers

4 bell peppers

2 cups cooked rice of choice

1 cup textured soy protein or chickpeas

1/2 cup light coconut milk

1/2 cup chopped bell peppers (any color you like)

4 tbsp crushed tomatoes

1 medium-sized onion, chopped

2 cloves garlic, minced

2 tbsp Braggs aminos

1 tbsp oil (e.g. sesame oil or coconut oil)

1 tbsp peanut butter

1/2 tbsp curry powder

1/4 tsp smoked paprika

salt and pepper to taste

vegan cheese sauce (or your favorite vegan cheese) to taste

chopped chives to taste

Instructions

Cook your favorite rice according to packaging instructions. You will need 2 cups of cooked rice for this recipe

Soak 1 cup of textured soy protein (TVP) in a bowl with 1 cup of hot water (or vegetable broth) and set aside for 5-10 minutes (skip this step if you are going to use chickpeas). The TVP will begin to fluff and absorb all the liquid

With a knife, carefully remove the "lids" of the 4 bell peppers and also discard all the seeds

Heat oil in a skillet, add the chopped onion, minced garlic, the textured soy protein and fry for 4-5 minutes over medium heat

Add the chopped 1/2 cup bell peppers, crushed tomatoes, Braggs, peanut butter, spices (curry, smoked paprika), salt/pepper to taste and coconut milk to the skillet and let simmer for about 5 minutes on low-medium heat. Stir occasionally

Now add the cooked rice and check if the mixture needs more salt/pepper/spices

Fill the 4 peppers with the rice/veggie mixture, add your favorite vegan cheese to taste or make my easy vegan cheese sauce, and cook in the oven at 190 degrees C (about 375 degrees F) for about 30-45 minutes. You will probably have some leftovers of the rice/veggie mixture

Stir-fried Eggplant and Tofu in Homemade Teriyaki Sauce

Eggplant and Tofu Teriyaki
Good for 2-3 servings

3 large long eggplants (400g total 16oz), I used chinese eggplants
2 blocks extra firm tofu (200 g each - 8oz)
3 tbsp sesame oil or other oil
2 cloves garlic, minced
1/2 red bell pepper, sliced
5-6 tbsp teriyaki sauce, adjust according to desired taste (easy homemade recipe in blog)
Salt and pepper, to taste
Sesame seeds and chopped spring onion, for topping

Steps
Slice eggplant into strips or your choice of shape. To blanch eggplant, boil a pot with water. Once the water boils, add in the eggplant and leave to cook for 3-4 minutes until half-cooked. Then set aside.* (see notes)
Drain excess liquid from the tofu. I like to do this by wrapping the tofu in a towel and pressing down with a heavy surface. Slice tofu into strips or shape of your choice.
Heat a non-stick pan. Add in 2 tbsp oil. Once hot, add in the tofu. Pan-fry until golden brown and crisp on each side. You may need to do this in batches depending on the size of your pan. Set tofu aside.
In the same pan, add 1 tbsp sesame oil. Sauté the garlic until aromatic then add in the bell peppers. Once the bell peppers are cooked, add in the tofu and eggplant. Pour in the teriyaki sauce. Leave to cook for a few minutes until the tofu and eggplant have absorbed the sauce. Feel free to add more teriyaki sauce.
Season with some salt and pepper, to taste. Drizzle more sesame oil, if desired. Feel free to top with more sesame seeds. Turn off heat and enjoy with some steamed rice!

4 6oz (170g) lobster tails
1 teaspoon salt or to taste
Cracked pepper to taste
2 tablespoons cooking oil
1/2 cup unsalted butter, divided
2 tablespoons fresh lemon juice, (adjust to your taste)
4 large cloves garlic crushed
Lemon slices to serve
1 tablespoon fresh chopped parsley to garnish.
Instructions-
*Thaw out lobster tails, if frozen, in a pot of cold water for 30 minutes or more, until fully thawed. *Rinse and pat dry with paper towels. *Using sharp kitchen shears, cut the top shell down the centre of the back to the end of the tail, leaving tail fan intact. *Remove vein or shell shards, if any. *Run your finger between the meat and the shell to loosen it. Spread the meat slightly open. *Pull and lift the lobster meat off of the bottom of the shell, being careful not to pull the tail out completely. *Season lobster tails generously with salt and pepper. *Heat 2 tablespoons butter and oil in a pan or skillet over medium-high heat. Swirl in 1 tablespoon of lemon juice and sear lobster, flesh side down on the pan, for 2 minutes until edges are crisp and golden. *Flip all tails, cover pan and let cook for a further 1-2 minutes, or until shells are pink and meat has just cooked through (opaque) -- be careful not to overcook!
*Melt the remaining butter in the centre of the pan; sauté the garlic until fragrant (about 1 minute). *Squeeze in remaining lemon juice and spoon pan juices over the lobster meat.
*Take off heat immediately and garnish with parsley
*Serve with remaining pan sauce and lemon slices.
