From an economic standpoint, selling and shipping produce is both very costly and time consuming for farmers. When not selling their produce locally, farmers receive only $0.20 of each food dollar. The remaining $0.80 per food dollar is spent on transportation, packaging, processing, refrigeration, and marketing.

With our limitless options, we’ve been trained to believe that imperfect-looking foods should be passed over. However, like everything else in nature, no living thing is created perfectly—that’s just the polish and sorting groceries stores do to make their product look more visually appealing.

When you see bumps, a little wilting, soft bruising or asymmetry, don’t pass up that piece of produce, just rethink the way you can use it!

Wilted broccoli? As long as it’s not slimy or molding, toss it in a stir fry. Bruised orange? Use its juice for a fresh dressing or marinade!

As you go about your meal prep peeling carrots, onions, garlic, and other winter veggies, don’t throw those nutritious peels and ends away!!

Instead, dedicate a large ziplock bag to veggie trimmings and keep it tucked in your freezer. When you’re in need of veggie stock, add water and boil for a delicious base for soups.

You can also add bones to the mix for a chicken or beef broth.

Why not cold water? During the winter, your body craves warmth to protect itself against dropping temperatures. According to Traditional Chinese Medicine, cold water can slow down organ function and cause muscles to contract, creating discomfort.
