Chicken & Goat Cheese Skillet recipe
Chicken & Goat Cheese Skillet
Ingredients
1/2 pound boneless skinless chicken breasts, cut into 1-inch pieces
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons olive oil
1 cup cut fresh asparagus (1-inch pieces)
1 garlic clove, minced
3 plum tomatoes, chopped
3 tablespoons 2% milk
2 tablespoons herbed fresh goat cheese, crumbled
Hot cooked rice or pasta
Additional goat cheese, optional
Directions
Toss chicken with salt and pepper. In a large skillet, heat oil over medium-high heat; saute chicken until no longer pink, 4-6 minutes. Remove from pan; keep warm.
Add asparagus to skillet; cook and stir over medium-high heat 1 minute. Add garlic; cook and stir 30 seconds. Stir in tomatoes, milk and 2 tablespoons cheese; cook, covered, over medium heat until cheese begins to melt, 2-3 minutes. Stir in chicken. Serve with rice. If desired, top with additional cheese.

Keto Corned Beef & Cabbage
INGREDIENTS
3-4 lbs corned beef
2onions, quartered
4 celery stalks, quartered crosswise
1 package pickling spices
Kosher salt
Black pepper
1 medium green cabbage, cut into 2" wedges
2 carrots, peeled and cut into 2" pieces
1/2 c.
Dijon mustard
2 tbsp.
apple cider vinegar
1/4 c.
mayonnaise
2 tbsp.
capers, roughly chopped, plus 1 tsp brine
2 tbsp.
parsley, roughly chopped.
DIRECTIONS
Place corned beef, onion, celery, and pickling spices into a large pot. Add enough water to cover by 2", season with salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer until very tender, 3–3 1/2 hours.
Meanwhile, whisk dijon mustard and apple cider vinegar in a small bowl and season with salt and pepper. In another bowl, mix mayo, capers, caper brine, and parsley. Season with salt and pepper
Add cabbage and carrots and continue to simmer for 45 minutes to 1 hour more, until cabbage is tender. Remove meat, cabbage, and carrots from pot. Slice corned beef and season with more salt and pepper.
Serve with both sauces on the side for dipping.

1 head cauliflower (stems removed and sliced)⁠
2 tablespoons olive oil⁠
2 tablespoons dry ranch seasoning⁠
1/4 cup parmesan cheese⁠
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦⁠
Preheat the oven to 425°F/ 220°C. Remove the stems from the cauliflower and slice so you have as many flat edges as possible. Add the cauliflower to a mixing bowl and toss with the olive oil and ranch seasoning. Save the parmesan for later.⁠
Line a baking sheet with parchment paper and place the cauliflower in a single layer, do not overcrowd your pan. Roast 15 min. Remove from the oven and sprinkle with parmesan, toss cauliflower and turn to coat. Roast an additional 10-15 min until it reaches your desired crispness.⁠

: Sweet Potato Breakfast Hash⠀
• 1 large sweet potato, diced⠀
• 1/3 white onion, diced⠀
• 1/2 cup bella mushrooms, sliced⠀
• 1/2 cup grape tomatoes, halved⠀
• 2-3 handfuls spinach⠀
• scrambled eggs⠀
• 1/4 avocado⠀
• seasonings: chili powder, garlic powder, paprika, sea salt, and pepper⠀

Cook sweet potatoes in a large pan over medium heat with a couple tbsp olive oil for about 8 minutes. Place rest of veggies in the pan and cook until it’s all cooked, about 5 more minutes. Scramble eggs, and top with avocado and everything but the bagel
