RECIPE: WHITE ROCKY ROAD 🤍🍫🥭

I know this was all the hype during Christmas, and we are now in Jan, but I am still LOVING this recipe.. I want to make it every week... 🤤

Let's normalise eating rocky road at any time during the year!! 🍫

INGREDIENTS:
🤍 1x 315g block Caramilk chocolate
🤍 approx. 1c marshmallows, chopped
🤍 1/2c dried mango, diced
🤍 5x scotch finger biscuits, chopped
🤍 4x meringue nests, roughly crushed
🤍 3tbsp passionfruit pulp

METHOD:
🤍 Melt chocolate in a large microwave save bowl. I put it in the microwave on 30 second intervals, stirring in between, until smooth.
🤍 Add the remaining ingredients except the passion fruit and stir to combine.
🤍 Pour into a lined baking tray and drizzle over the passionfruit pulp.
🤍 Place into the fridge to set. Mine took approx 3 hours (to be safe).

My favourite items in the shopping cart this week were:

🤍 Woolworths Free From Gluten Bagels - I am having these for breaky with eggs and bacon; delish!!

🤍 Bega Lactose Free Grated Cheese - who doesn't love cheese?? I am lactose intolerant so this cheese is a win!! Having this on my dinner which is chicken burger fries 😋

🤍 Spud Lite potatoes - these are usually in my cart at least eery fortnight, if not every week! Can't go wrong really

🤍 Pauls Lactose Free Light Cream - again, for my lactose intolerant friends this is great! This ones going into my garlic prawns

🤍 Carmans Dark Choc Cherry and Coconut bars - these are literally in my cart every week without a doubt

🤍 Joy St Protein Puffs - these are new and I am only just trying them this week but they are good!! Macros and cals are a dream

WHAT I BOUGHT VS. WHAT I MADE: GREEK CHICKEN BOWLS 🍗

My go-to meal when I don't know what to cook. You can also substitute the pita bread for roasted potatoes. 🥔

METHOD:
🤍 mix chicken with greek seasoning and fry in a pan with a drop of olive oil until cooked
🤍 in a small bowl, add diced cucumber, tomato, onion feta and olives. mix!
🤍 in a pan, fry pita bread in a spray of olive oil. one toasty, cut into triangles
🤍 once chicken is cooked, add vegetable mix, chicken and pita into a bowl. top with tzatziki

🍖 lean beef mince for gluten free pasta bolognese

🍪 Arnotts gluten free scotch finger biscuits, also for apple pie overnight oats (it's the best bit really)

🥦 broccoli because it's my favourite vegetable!!

🍝 gluten free spirals - this brand is my go to!!

🌽 corn thins for a pre workout snacky snack with honey
