Loaded them up with dried cranberries, black raisins, walnuts, and almonds.

I began reading this book back during the pandemic. For whatever reason I couldn’t get into it, so I put it aside unfinished.
The time to pick it up again and read it was now.
A solid book full of real life potential.

Inspired by , I’m on a mission to use up items from the pantry and freezer. Spring clean out and .
Flageolets are a new bean for me and had been lingering on the shelf. I didn’t know what to expect. I imagined making a cassoulet or something equally grand. Reading about them and tasting them are different experiences.
Cooked them up simply: whole black peppercorns, bay leaves, seaweed, pinch of kosher salt. Made this soup with one half. Froze the other half.
Toothsome. Tender yet firm. Delicious.
1/2 lb cooked flageolets
1 link double smoked kielbasa, chunked
Less than 1/2 a bag of sancocho veggies
1 white wine & herb pod
I used the remainder of the frozen veg. Otherwise I would use the usual suspects: potatoes, onions, carrots, parsnip, sweet potato, squash, celery and/or any other available veg.
Soup is an answer to so many questions.

Beef, carrots, celery, onion, garlic, and sprigs of aromatic herbs at 300F for 4 hours. Toasted cassava flour added to thicken the gravy.
Russet potatoes and garlic (confit) added to oven at halfway
Served with a side of arugula for pop of bitter flavor and digestive support

I’m definitely not ready for a new career in food photography, but I CAN put together many a delicious soup.
The star of today’s pot of pleasure is a bag of yellow eye beans.
It all began by sautéing (in bacon fat) until tender ~ a french mirapoix, chopped aji dulce, and smashed garlic. The soaked beans, a generous chunk of ham found lurking in the back of the freezer, rosemary sprigs, a few bay leaves, and a hearty pinch of salt and pepper flakes were added. Pot brought to a boil; then fire dropped to a simmer and pot covered, leaving contents to cook until beans were tender yet still firm (roughly 1.5 hours).
Plated and served with scallions and a dollop of spicy mustard.
As always, start with the basics and build out with what is available.
