The most popular food in the world is a burger - while one of the most powerful super foods is Quinoa. Chef Marko Bonifaz shared his Quinoa Burger creation with me during my visit to Bolivia. By working with a fast food chain he has been able to increase the consumption of this superfood with his community and change the way we can approach convenient healthy food.

Welcome to La Paz - the highest altitude capital city in the world - its at an altitude of over 11,000 feet. No subways here but they do have an ingenious cable system called the teleferico to get you from the start of the city in the valley to the plateau at the top where over a million people live at ultra high altitude!

What happens to the human body at extreme altitude? I found out firsthand at the High Altitude Clinic in Bolivia with Dr. Gustavo Zubietta, a global expert in high-altitude physiology.

At 3,650m (12,000ft) in La Paz, we ran a series of tests to measure my body’s response to low oxygen, including:
✅ Haematocrit test (measuring red blood cell concentration)
✅ Breath-hold test (pushing oxygen retention)
✅ Treadmill & endurance tests (cardiovascular response to altitude)
✅ High-altitude simulation—taking me virtually to 6,542m (21,463ft), the height of Mount Sajama, Bolivia’s highest peak

At that altitude, oxygen is scarce, and the body has to fight to keep up. Experiencing the physiological effects firsthand was both humbling and eye-opening. Huge respect to the people who live and thrive in these extreme environments!

One of the best meals I’ve ever had was at Ivo’s house. Vegetables grown from the garden, meats raised by his family and cooked over olive branches from their trees, handmade pasta and wine made from their grapes to name a few highlights. There is something to be said about the process and how it enriches the food and the experience🍴
