Today I want to share with you "Wholegrain bread filled with shaved ham, beetroot spread, and fresh salad greens".

Nutrition Information (per serving):

Carbohydrate Total 25g

Ingredients:
2 wholegrain bread
1 tbsp beetroot dip
1 small carrot, coarsely grated
50g salt-reduced shaved ham
1 ⁄2 small cucumber, sliced
20g baby spinach, rocket or mixed salad leaves

Directions:

1) Place bread on a clean work surface. Spread the dip down the middle of the wrap. Top with carrot, ham, cucumber and spinach.

2) Wrap to enclose the filling. Serve with mixed salad leaves.

Today I want to share with you "Steak sandwich".

Total Time: 20 minutes

Nutrition Information (per serving):
Energy 1344 kj (321cal)
Protein 22.5g

Cholesterol 0.1g

Ingredients:
1 tbsp olive oil
4 beef minute steaks
1 red onion, sliced
6 cherry tomatoes, sliced
8 slices thick toast
Barbecue sauce
Handful mixed lettuces
sunflower seeds, cashew nuts, raisins, to serve
Extra barbecue sauce, to serve
Pepper/salt (Optional)

Directions:

1) Heat 1 tablespoon olive oil in a large frying pan on high. Cook 4 minute steaks for 1-2 mins each side until cooked to taste. Transfer to a plate.

2) Sauté 1 sliced red onion and 2 sliced tomatoes in the same pan for 4-5 minutes until tender, turning tomatoes once.

3) Make 8 slices of thick toast. Spread barbecue sauce over 4. Top each with a handful of mixed lettuces, a steak, sliced tomato and onion. Top with remaining toast slices.

4) Serve with sunflower seeds, cashew nuts, raisins and extra sauce of choice.

Ingredients:
150g drained chunks of canned tuna in sunflower oil
4 cherry tomatoes, halved
2 tbsp fresh continental parsley, chopped
2 tsp fresh lime juice
1 tsp chilli sesame oil
1 chilli, slices
3 slices wholemeal sourdough bread
20g baby rocket leaves
Pinch Black Pepper

Directions:

1) Combine the tuna, tomato, parsley, lime juice, chilli sesame oil and chilli in a bowl.

2) Place bread on a serving plate. Top with rocket, the tuna mixture, add black pepper topping.

Today I want to share with you "Wholesome Beef Patties with Feta, Mint, and a Side of Grilled Vegetables and Hummus".

Total Time: 20 minutes

Nutrition Information (per serving):

Ingredients:
250g extra lean beef mince
25g feta, crumbled
2 green shallots, finely chopped
2 tbsp chopped fresh mint leaves
1 garlic clove, crushed
1 tsp finely grated lemon rind
1 corncob, husk and silk removed, cut into 4 pieces
1 bunch asparagus, trimmed
1 small red capsicum, deseeded, cut into wedges
2 tbsp hummus

Directions:

1) Place beef, feta, shallot, mint, garlic and lemon rind in a bowl. Season. Use clean hands to combine then shape into 6 patties. Place in a large sealable glass or plastic container.

2) Place the corn, asparagus and capsicum in another large sealable glass or plastic container.

3) Freeze the containers for up to 3 months or until the night before cooking. Defrost overnight in the fridge.

4) Preheat a barbecue grill or chargrill pan on high. Lightly spray patties and vegetables with oil. Cook corn, turning, for 8-10 minutes. Cook patties and capsicum for 3-4 minutes each side and asparagus for 1-2 minutes each side.

5) Divide patties and vegies between serving plates. Season and serve with hummus.
