What’s this you ask? It’s tofu eggz, perfect for a McMuffin type sandwich. You can always use the frozen Just Egg patties as well but some people don’t like those or want a cheaper option. Here it is. I do mine in the air fryer, you can oven bake them too and keep in the fridge all week. If you want them yolky you can make a simple vegan hollandaise sauce. Both recipes here. I do add a small amount of black salt to the eggz. I prefer tempeh bacon (4 slices only 120 calories 👍🏻), others may like a vegan sausage patty like Beyond or LightLife. Half slice of vegan smoked Gouda. Delish ….
All can be premade and easy to grab from the fridge and microwave all week!

Quick Minestrone Soup 20-25 minutes, 4 servings
Sauté 1/4C chopped onion, 2-3 minced garlic cloves, 1 stalk diced celery(optional) in veggie broth 2-3 minutes, add 1 1/2T Italian Seasoning and mix, add 1 14oz can fire roasted diced tomatoes, 2-4T tomato paste (1 at a time to taste) and 1/4c veggie broth, simmer 10 minutes on low. Add 3/4-1C mixed vegetables and 1 can of white beans drained and rinsed of choice (I used navy). Add 1C boiled pasta shells or elbow noodles. Top with pepper and vegan parmigiana if desired.

Vegan Bolognese Sauce (Mushroom Based)
I’ve done lentil bolognese as well. I of course eliminated the oil and walnuts to lower the fat content (so I could eat the brownies 🤫 with less guilt) and added some more tomatoes.

This crockpot mushroom stew may not look like all that but its taste was incredible. You of course change, add, delete based on your preferences.
1 med onion diced, 4-5 carrots half moon sliced, 3-4 celery stalks sliced, 4 cloves garlic minced, 3-4 med potatoes diced, 1/2-3/4 cups dried lintels, 12oz sliced mushrooms (I used baby bellas), 2t thyme, 2t sage, 1t rosemary, 1/2t cayenne pepper (optional), 3-4 cups vegetable broth more if skipping wine, 1 cup red wine, 2-3T soy sauce/amino acid, 1T Worcestershire/steak sauce, 1 6oz can tomato paste.
