Peanut Butter Cheesecake
Ingredients:
For the Cheesecake:
24 oz cream cheese, softened
1 cup sugar
1 cup peanut butter
1 teaspoon vanilla extract
3 eggs
1 cup sour cream
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
For the Chocolate Ganache:
1 cup heavy cream
8 oz semi-sweet chocolate chips
Directions:
Prepare the Crust:
Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Chill in the freezer while preparing the filling.
Make the Cheesecake Filling:
Beat cream cheese, sugar, and peanut butter until smooth. Add vanilla, then eggs one at a time. Fold in sour cream.
Pour filling over crust and smooth the top.
Bake:
Preheat oven to 325°F (160°C). Bake for 60 minutes. Turn off oven and let sit for an additional 60 minutes with the door slightly ajar.
Prepare the Ganache:
Heat heavy cream until it simmers. Pour over chocolate chips, let sit for 5 minutes, then stir until smooth.
Pour ganache over cooled cheesecake and refrigerate for at least 4 hours.
