Hereโ€™s whatโ€™s in season and how it supports your health:

๐Ÿซ‘ Peppers โ€“ Rich in vitamin C and carotenoids, supporting skin and immune health.
๐Ÿ… Tomatoes โ€“ A great source of lycopene, linked to heart and prostate health.
๐Ÿ‘ Peaches โ€“ Juicy, sweet, and a great source of fibre and vitamin A.
๐Ÿง„ Garlic โ€“ A flavour booster with anti-inflammatory and antimicrobial properties.

Ontario Peach Salsa
Ingredients:
โ€ข 2 ripe peaches, diced
โ€ข 1 medium tomato, diced
โ€ขย 1 small red or green bell pepper, finely chopped
โ€ขย 1 small red onion or 2 green onions, finely chopped (optional)
โ€ข 1 clove garlic, minced
โ€ขย Juice of 1 lime
โ€ขย Pinch of salt and pepper
โ€ขย Fresh cilantro or parsley, chopped (optional)

Directions:
1. Combine all ingredients in a bowl.
2. Toss gently to mix, being careful not to mash the peaches.
3. Let sit for 10โ€“15 minutes to allow the flavours to meld.
4. Serve with grilled chicken, fish, tacos, or tortilla chips.

Asparagus โ€” Rich in folate supporting red blood cell formation and growth. Asparagus is also high in fibre, only half a cup of asparagus offers 2 grams of fibre.

REPLENISH update: ๐Ÿ‡๐Ÿฅ๐Ÿซ๐Ÿ‹๐Ÿฅ‘

As many of you know, I am in hustle mode: working, completing my Masterโ€™s, seeing one-on-one clients, and running my business, among other things. While I have gotten used to managing all my competing prioritiesโ€ฆ I will have to make some new changes in 2025.

For the last year, Natalie at the Eco Den has kindly allowed me to use her storefront as a grab-and-go location for Replenish meals. I have loved sharing her space and meeting new faces, but for now, I will be removing the fridge from the store while I continue working towards my Masterโ€™s. Simply put, my new placement schedule conflicts with my ability to deliver to the store during regular business hours. The removal of the fridge means there wonโ€™t be any grab-and-go options for the time being. However, I will continue to make meals and deliver upon request!

2025 will be a busy year, and I donโ€™t want it to pass by in the blink of an eye.ย Although I am sad to be making this change, this will free up some of my mental space to continue focusing on many other parts of my business and my future as an RD.
