Honestly, these cookies are almost too good to be true. They're healthy AND they're the easiest to make.
INGREDIENTS
1 stick (1/2 cup) salted butter, at room temperature
1/4 cup dark or light brown sugar
1/4 cup honey
1/3 cup tahini
1 large egg, at room temperature
1 teaspoon vanilla extract
1 cup almond flour (see note for alternative)
1/3 cup coconut flour (or additional almond flour)
3/4 teaspoon baking soda
1/4 teaspoon cinnamon (optional)
1/4 teaspoon kosher salt
1 cup semi-sweet or dark chocolate chips, or chunks
flaky sea salt, for sprinkling
INSTRUCTIONS
Preheat the oven to 350° F. Line a baking sheet with parchment paper.
In a mixing bowl, beat together the butter, brown sugar, honey, and tahini until combined. Beat in the egg and vanilla, beating until creamy. Add the almond flour, coconut flour, baking soda, cinnamon (if using), and salt. Fold in the chocolate chips/chunks.
Scoop the dough out into rounded 1 tablespoon size balls, the dough will be a little wet. Place 2 inches apart on the prepared baking sheet.
Bake 5 minutes. Remove the pan from the oven and tap the baking sheet on the counter 2 times to flatten them down. The cookies will have brown edges at this point, that is OK. Return to the oven and bake another 2-3 minutes, the cookies will be browning, but still doughy in the center. Remove from the oven and gently tap the baking sheet on the counter 1-2 times to flatten them down again.
Let the cookies cool on the baking sheet. They're going to look weird, but as they cool, they'll set nicely. They will continue to cook slightly as they sit on the baking sheet. Sprinkle with flaky salt. Eat warm (highly recommended) or let cool and store in an airtight container for up to 4 days.

INGREDIENTS
1 cup cooked shredded chicken
1/4 cup plain greek yogurt
1/3 cup buffalo sauce (homemade sauce in notes)
2 tablespoons chopped fresh chives
1 tablespoon dried parsley
1 teaspoon dried dill
4 large (burrito size) whole wheat or gluten-free tortillas
2 cups shredded romaine lettuce
1-2 jalapeño or poblano pepper, chopped
3 green onions, chopped
1/2 cup shredded cheddar cheese
1/2 cup shredded pepper jack cheese
olive oil, for cooking
JALAPEÑO RANCH
1 cup plain Greek yogurt
1/2 cup fresh cilantro, finely chopped
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup pickled jalapeños chopped + 2 tablespoons brine
juice from 1 lime
1 teaspoon kosher salt

Sweet and spicy is such a classic combo. It just…works! This recipe is particularly amazing because you literally just throw everything into your crockpot and let it do its thing.
SWEET & SPICY SAUCE
Chicken Broth – thins out and flavors the sauce.
Sriracha – adds heat to the dish. Use as much or as little as you like depending on your heat tolerance. Remember: you can always add more, but it’s harder to take it out. 😉
Honey – offsets the spice from the sriracha. Feel free to add more if the end result is still a little too spicy.
Rice Vinegar – gives a mildly tangy flavor to the sauce. DO NOT SUBSTITUTE WITH ANOTHER VINEGAR. Seasoned rice vinegar is not as potent as other vinegars (white, apple cider, etc.) If you absolutely must use another vinegar, start with a quarter of the amount listed and add more to taste after cooking, if necessary.
Soy Sauce – provides a salty, umami, Asian inspired flavor.
Garlic – rounds out the sauce with a subtle nuttiness.
Ground Ginger and Black Pepper – adds a little extra heat and spice.
OTHER INGREDIENTS
Chicken Breast – some lean protein to fill out your meal. The chicken really soaks up the flavor of the sauce and becomes incredibly fork tender.
Cornstarch – thickens the sauce. Flour may be used, but you’ll need to use twice the amount listed (*not tested).
Green Onion (optional) – a fresh, yet subtle onion flavor.
Cilantro (optional) – gives the meal a fresh, herbaceous taste.
Sesame Seeds (optional) – adds some extra texture and a subtle sesame flavor.
Carb of choice (optional) – rice, quinoa, cauliflower “rice”, mashed potatoes . . . the choice is yours!

▢1 lemongrass stalk finely chopped
▢1/4 cup Thai red curry paste
▢2 tablespoons fish sauce
▢2 (14 ounce) cans full fat coconut milk

▢2 tablespoons honey
▢1 pound boneless skinless chicken breast or thighs diced
▢1 pieces bunch broccoli rabe ends trimmed + roughly chopped into bite size
▢1/4 cup fresh basil and or cilantro roughly chopped
▢Steamed rice for serving

INGREDIENTS
8 bone-in, skin-on chicken thighs
16 ounces baby red potatoes, halved
16 ounces baby carrots
16 ounces green beans, trimmed
2 tablespoons chopped fresh parsley leaves
FOR THE SAUCE

½ cup reduced sodium soy sauce
½ cup honey
¼ cup ketchup
2 cloves garlic, minced
1 teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon crushed red pepper flakes
¼ teaspoon ground black pepper
INSTRUCTIONS

In a large bowl, combine soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes and pepper.
Place chicken thighs, potatoes, carrots and soy sauce mixture into a 6-qt slow cooker. Cover and cook on low heat for 7-8 hours or high for 3-4 hours, basting every hour. Add green beans during the last 30 minutes of cooking time.
OPTIONAL: Preheat oven to broil. Place chicken thighs onto a baking sheet, skin side up, and broil until crisp, about 3-4 minutes.
Serve chicken immediately with potatoes, carrots and green beans, garnished with parsley, if desired.

Cheesy, saucy, low-carb, and protein-packed, this crock pot veggie lasagna is the most comforting, crowd-pleasing way to serve vegetables

Ingredients

2 medium zucchini
1 medium eggplant
Kosher salt
16 ounces good-quality store-bought tomato-based pasta sauce, or homemade (2 cups)
1 medium red onion diced
1 red bell pepper diced
16 ounces low-fat cottage cheese do not use skim
2 large eggs
8 ounces part-skim shredded mozzarella cheese or provolone cheese, divided (about 2 cups—I used a blend of both cheeses)
For serving: Parmesan cheese freshly chopped herbs such as basil or parsley

Hot cocoa is a must in the winter, and this vegan slow-cooker hot cocoa is party-ready. We recommend a generous topping of whipped cream and vegan marshmallows, but you can even make it boozy if you like. Any way you serve it, the scent of this hot cocoa simmering in your slow cooker is reason enough to try it out.
Ingredients:

1 can coconut milk
2 cups unsweetened soy milk (or dairy-free milk of your choice)
2 cups hot water
1/2 cup cocoa powder
1/3-1/2 cup sugar, to taste
1 ounce chopped dark chocolate
1/8 teaspoon salt
1 teaspoon vanilla bean paste or vanilla extract
vegan whipped cream, for topping
vegan marshmallows (like Dandies), for topping

I like to just let my soup cook all day long. The house smells incredible as it simmers away in the slow cooker.
Once the soup has finished cooking, before serving, stir in a few large handfuls of kale, cream or milk, parmesan cheese, and the cheese tortellini. Cook another few minutes and then that's it.
INGREDIENTS
1/4 cup extra virgin olive oil
1 yellow onion, chopped
2-4 cloves garlic, minced or grated

2 tablespoons fresh thyme leaves (or 2 teaspoons dried)
1 tablespoon dried basil
1 tablespoon dried oregano
1-2 teaspoons fennel seeds use to your taste
1 teaspoon smoked paprika
1 pinch crushed red pepper flakes
kosher salt and black pepper
2 tablespoons tomato paste
6 carrots, chopped
4 celery stalks, chopped
1/2 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc
6 cups low sodium vegetable broth
4-6 cups roughly chopped kale
1/2 cup whole milk or heavy cream
1/3 cup grated parmesan cheese, plus more for serving
