Shakeology Chocolate Covered Strawberries
Makes 12 servings, 2 strawberries each.
Ingredients
Parchment paper
¼ cup + 2 Tbsp. / 90 ml extra-virgin coconut oil, melted
1 scoop Chocolate Shakeology
24 large, stemmed strawberries, washed, completely dried, chilled
Instructions
1. Cover a large baking sheet with parchment paper. Set aside.
2. Combine oil and Shakeology in a small bowl; mix until smooth.
3. Grip each strawberry by the leaf and dip ¾ of it into Chocolate Shakeology mixture, swirling to cover. Let excess drip back into bowl. Chocolate mixture will begin to solidify on chilled strawberry. Repeat dipping and draining one or two more times until chocolate layer is thick.
4. Place on prepared sheet. Repeat with remaining strawberries.
5. Refrigerate for 15 minutes, or until coating is set.
6. Store leftover strawberries in an air-tight container in the refrigerator for up to 3 days.
