Seed crackers are easy to make and you can add loads of nutrients to them to make them more nutritious then the store bought versions. Plus they have no preservatives. I often add psyllium husk powder to mine for extra fiber and various herbs like rosemary, oregano and thyme.

Preheat oven to 400 F.

Add and mix together -
1 cup chia seeds
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup sesame seeds
Salt if desired and herbs of choice.

You can change any of these ratios if you like one seed more then the other. The chia is what binds the cracker together.

Add 1 cup of water, stir and let sit for 10 minutes.

Spread on parchment lined backed sheet and place in oven until done. About 20-30 minutes. Be sure to check so it doesn’t burn. It keeps cooking a bit when you take out.

Gluten free organic chicken nuggets for the win this week for the kids and adults menu! East recipe and they bake quickly in the oven.

Mix gluten free panko with your choice of gluten free bread crumbs or organic gluten free corn flakes cereal and season to taste.

Set aside three bowls.

1. gluten free flour
2. Eggs - beaten
3. Panko and bread crumb/cereal mixture

All seasoned to taste. (Spices, salt, pepper, Parmesan cheese in bread crumbs - whatever you like).

One by one dip chicken pieces in flour, then egg, then bread crumbs.

Place on parchment paper lined baking sheet and bake at 400 for about 4-6 minutes per side.

Enjoy with favorite dips and sauces or add to salads and wraps. 😊

Ending the first week of 2023 with calming foods to heal and calm the gut, mind and body. Asparagus is a low calorie vegetable filled with tons of nutrition and flavor. It’s a great anti-inflammatory food that is high in Vitamins E, C and glutathione.

This particular soup is easy to make and you can add whatever you please to it. My version contains -

1. Grilled asparagus - baked at 400 degrees with avocado oil and sea salt until cooked through.
2. Sautéed yellow onion, celery and garlic.
3. Vegetable broth.
Add all of the above together and purée in strong blender and season to taste.

Adding as many dark greens to our diets as the weather gets cooler and the days get shorter is essential right now as they play a big part in building our immune systems and adding a lot of fiber to our diets. I love to add vegan feta to my salads and Violife is my favorite brand.

Toss with extra virgin olive oil, lemon and sea salt or a creamy tahini dressing. 💫

Pickled Onions are considered a superfood and are rich in folate, calcium, potassium, magnesium and Vitamin C. They are also a probiotic, which is great for the gut.

Easy Recipe -
Boil -
1 cup filtered water
1 cup distilled white vinegar
1 Tbsp cane sugar
1 Tbsp sea salt

Use a mandolin and cut 2 - 3 red onions on the thinnest slicer.

Put in 16 ounce mason jar and pour boiled liquid over sliced onions.
Add filtered water to any remaining space. Cover and put in fridge overnight.

On top of their health benefits, pickled onions are one of my favorite additions to salads and sandwiches and at just 17 calories per cup you can’t really go wrong! Enjoy! 💫

This bean sprout and grilled shrimp salad was made with all the leftovers from the weekend. Local farmer’s market corn, broccoli, scallions, shrimp and bean sprouts all prepared in various ways to give the dish lots of texture and flavor. Perfect to bring as a side to a bbq.

This quinoa salad is simple and tasty. A mixture of different colored quinoa, English cucumbers, seeds removed and chopped, cherry tomatoes, chopped and drained a bit, vegan feta (I love Violife ), a small amount of EVOO, a drizzle of balsamic glaze and sea salt to taste. It’s even better the next day! 💕
