NETWORK SPOTLIGHT

Monticello Academy was recently recognized with the Innovation in the Preparation of School Meals Award as part of the USDA Healthy Meals Incentives Spotlight celebrating school nutrition trailblazers.

One way the school shines is by preparing meals from scratch using locally raised beef. Student favorites include Sloppy Joes, Baked Beef Pasta, and Beef Taco Salad—all made with fresh, local ingredients.

To engage families and showcase their work, Monticello hosted a Winter Open House Sampling Event. Parents and students were invited to enjoy five sample-sized portions of menu items, alongside a full salad and fruit bar and a smoothie bar. The free event not only highlighted the variety and quality of school meals but also encouraged families to be part of shaping the cafeteria experience.

AMBASSADOR SPOTLIGHT!

This reflection was written by one of our incredible Farm to School Ambassadors, Kaylie Lewis. Ambassadors are local parents, educators, and community members who help share stories about the impact of farm to school programs in their regions.

Kaylie shared this heartfelt reflection on her family's experience with summer school lunch:

"After a summer of lunch trays, chocolate milk, and eating with friends, the summer school lunch season has come to an end. As a mom to three young kids, I want to say how much we have enjoyed going to summer school lunch almost every day this summer. I am grateful to be able to feed my kids lunch for free to save a little on groceries.

I am also happy that my kids get exposed to some different foods that they normally don’t get at home (I really don’t like pears so I never buy them). My son is starting kindergarten this year so it has been awesome for him to practice opening his milk and dumping his tray. It takes one thing off of my list of worries for when he starts school to know that he will be comfortable with the lunch time routine.

I am a mom but I am also a public health professional. For whatever reason, some kids might go hungry during the summer without the consistency of lunch that they get during the school year. Good nutrition is so important for these kids’ growing bodies. I am so glad that I was able to see so many kids getting a well-rounded meal during the summer. I am sure that gave them the energy they needed to do all of the fun summer things that kids are supposed to do.

Let’s also give a shout out to all of the cafeteria workers who provided us with good lunches, clean tables, and smiles this summer. They were so efficient and kept the cafeteria so clean considering all of the messes made in such a short time span.

Thanks to everyone who makes summer school lunch possible. We look forward to doing this again next year."

Thank you, Kaylie, for this beautiful reminder of how much summer meals matter!

Ute Tribal Enterprise isn’t just selling locally, they're creating powerful learning opportunities for students by connecting them to Indigenous foods and history. Guests from across Utah joined us for this unforgettable experience.

A huge thank you to the Ute Tribal Enterprise team for welcoming us so warmly!

Schools: Interested in serving bison in your cafeteria? We’d love to connect you with Ute Tribal Enterprise, and even share kid-approved recipes!

From-scratch cooking, local food, and a whole lot of flavor! School nutrition teams throughout the state gathered in Lehi and Logan this week to join Chef Cyndi’s culinary crew to sharpen their scratch cooking skills — the first step toward serving more fresh, local items in school cafeterias.

Congrats to everyone who participated — your passion and teamwork are helping bring real food to the table for Utah students!

NETWORK SPOTLIGHT: K&S Blackner Custom Meats

Kolby Blackner of K&S Blackner LLC Custom Meats in Minersville has been raising and delivering farm-fresh meats for over two decades, but the last few years have marked a turning point. By selling directly to schools and handling deliveries himself, Kolby says it has completely changed the sustainability of his business.

Getting good food to kids, he says, is a "no-brainer." His commitment to quality and community makes K&S Blackner a shining example of what Farm to Fork can look like in action.

Kolby goes above and beyond to support schools, and we’re honored that students across Utah get to enjoy his nutritious products on their lunch trays!

The past couple school year, Utah schools served up local beef thanks to USDA funding for the Local Food for Schools Cooperative Agreement Program (LFS) — a partnership between the Utah State Board of Education (USBE) and local producers.

Through LFS, USBE helps schools purchase and distribute fresh, regional foods that are unique to their geographic area — with a special focus on beef and bison producers. The goal? Improve child nutrition while building stronger relationships between schools and local farmers and ranchers.

Schools and producers alike have shared powerful stories about how local food is transforming school meals.

👀 Rancher testimonials are coming next — stay tuned!
