LEMON BASIL GRILLED CHICKEN WITH BALSAMIC STRAWBERRIES

You can make this Lemon Basil Grilled Chicken with or without the Balsamic Strawberries but I highly recommend you don’t skip them because this combination is incredibly delicious. The chicken is so flavorful from the marinade and the strawberries add a burst of tangy sweetness that completes this dish. I like to serve it over fresh arugula and pile on extra Balsamic Strawberries because why not!

CAPRESE STEAK WITH FIG BALSAMIC

This Caprese Steak with Fig Balsamic is so easy and delicious and ready in 20 minutes. Pan sear or grill that steak seasoned with steak seasoning and blister the tomatoes. Once everything is plated I drizzled fig balsamic over the steak, sweet tomatoes, burrata and basil. Go ahead and drizzle extra fig balsamic than the recipe calls for because it’s that good! This dish was heaven on a plate and could not be any easier to achieve a company worthy dish! I can’t wait for you to try this recipe!

LEMON PEPPER SCALLOPS

These air fried Lemon Pepper Scallops are to die for! Sweet, succulent, buttery scallops coated in Lemon Pepper nut crumbs....are you drooling yet? I served them over Cauliflower rice mixed with spinach, a little garlic and ghee and it was the perfect dinner! Next time I will be doubling this recipe as we ate the whole pound of scallops ourselves. Sorry not sorry!

PINEAPPLE SALSA🍍🍍🍍

Fruit Salsas are so summery and so versatile! I love this Pineapple Salsa thats sweet and so delicious on just about anything! Grilled chicken, pork chops, shrimp or even fish tacos! It is not spicy but feel free to add jalapeño if you want the heat. Oh and this salsa would be amazing with cinnamon tortilla chips too!

DILLY PICKLES 🥒🥒🥒

When you are wondering what to make with all those garden cucumbers I got ya covered with my Dilly Pickles! These refrigerator pickles come together without all the time it takes from regular canning. I know because years ago we used to spend days in the kitchen canning! I finally perfected my old recipe into a quick refrigerator pickle that is ready in two days! Slice them any way you love your pickles or pickle them whole! No matter how you slice them they are sure to make you pucker when you bite into one!
