Today’s lunch was a delicious salad 🥗 I used organic spring mix, microgreens, tomato, cucumber, pickled beets, & sprouted pumpkin seeds.

I’m trying to eat more greens but I keep finding I just make salads - let me know your favorite way to eat more vegetables (especially the green ones!)

Do you love to eat cold cereal? If so, you might want to try making this yummy quinoa cereal. 🙌

I just rinse and cook red quinoa (my favorite) in the rice cooker. When it’s done, I scoop it in a bowl, add fruit (I love to add blueberries, raspberries, and banana slices), drizzle raw honey, sprinkle cinnamon, and pour in some milk.

It’s a DELICIOUS cereal that’s full of protein and fiber.

PS- the quinoa doesn’t go soft or mushy, so it has been great to take on the go (with the milk and fruit)! I used to take this with me to work for breakfast or even as a lunch.

Happy Valentine’s Day!!! 💕

Here’s my favorite hot chocolate recipe:

1 1/2 cups whole milk
1 tablespoon raw cacao
2 tablespoons maple syrup
1/4 teaspoon vanilla bean powder

Directions: I just blend everything up and heat on the stove until desired temp (steaming but not bubbling).

Enjoy! 🍫☕️💕
