MAPLE GLAZED CARROTS WITH LEMON CASHEW CREAM
Ingredients:
Carrots
1 pound organic carrots washed
1 tbsp extra-virgin olive oil
1 tbsp organic maple syrup
1 tbsp chopped unsalted & roasted pistachios
Lemon Cashew Cream
1/4 tsp sea salt
1 cup raw cashews soaked 2-3 hrs
1 lemon juiced
1/4 cup filtered water
Directions:
1. Soak the cashews in a bowl covered with water for 2-3 hrs.
2.Place washed and dried carrots on a cooking sheet lined with parchment paper.
3.Mix olive oil & maple syrup then drizzle over carrots making sure carrots are coated evenly.
4.Bake carrots at 400 degrees for 20 minutes.
For the sauce:
1. Place soaked cashews (discard cashew water), lemon juice, filtered water and sea salt in a blender and blend until smooth. *add additional water if too thick.
When carrots are finished, drizzle a generous amount of cream sauce and top with pistachios.
