Hearty Tofu and Vegetable Platter with a Tangy Balsamic Glaze
Ingredients:
- For the tofu:
- 1 block firm tofu, pressed and cubed
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon soy sauce
- 1 teaspoon maple syrup
- For the roasted vegetables:
- 2 cups broccoli florets
- 1 cup diced carrots
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
1. Preheat oven to 400°F (200°C). Toss vegetables with olive oil, salt, and pepper. Arrange on a baking sheet and roast for 20 minutes.
2. While the vegetables roast, heat olive oil in a skillet and pan-fry tofu until golden.
3. In a small bowl, whisk balsamic vinegar, soy sauce, and maple syrup. Pour over tofu and cook until glaze thickens and coats the tofu, about 2 minutes.
4. Serve tofu alongside roasted vegetables.
