GF Oil Free Quinoa Tabbouleh Salad

Light and Lively made with fresh herbs for incredible flavor. 🌱

1 cup quinoa prewashed or rinsed then cooked.
1 bunch fresh mint
1 bunch Italian flat leaf parsely
1 small red onion diced
3 Persian cucumbers diced
1 pound sweet cherry sugar plum or grape tomatoes, diced
3 lemons juiced – around 1/2 cup fresh juice
Freshly ground black pepper
Method

To cook the quinoa in the 3 QT Instant pot – place 1 cup of rinsed quinoa with 1 1/4 cups water in the liner. Put the lid on and set the timer for 5 minutes – high pressure with natural release.

When the quinoa is done, spread it out on a parchment lined rimmed baking sheet to cool. Place in the fridge if you need to cool it down quickly. When cool add it to a large mixing bowl.
Add the rest of the ingredients and stir gently to combine.

Chill before serving. Give it a gentle stir before serving.

🍉Watermelon Slushie

A light refreshing summertime treat. Healthy, easy and delicious. Made in a Blender.

6 cups cubed watermelon 🍉
1 lime- zest and juice – or to taste
1 cup sparkling water
1 cup crushed ice or ice cubes
1/4 cup fresh mint
2 dates – optional if you need additional sweetness.

Put everything in the blender and process until slushie.

🍉 Substitutions

Lemon instead of lime
Half watermelon – half strawberries
Lime flavored sparkling water instead of fresh lime juice
Dates to add sweetness
Fresh basil instead of mint
Add a little cucumber

Yesterday I celebrated my 66th birthday, and it might just be one of the best birthdays I’ve ever had! 🎉

It was a fabulous day filled with love, laughter, and some of my very favorite things. We had lunch at Nectar Café in Auburn — my go-to taco plate never disappoints! 🌮💚

The day was spent visiting, reminiscing, playing games, and reading books with the grandkids. I absolutely loved the handmade cards they gave me — their pride in creating something special just melted my heart. 🥰 Our grandkiddos speak Spanish fluently and call me Lita and Tom Lito which Is short for Abuelita and Abuelito - Spanish for Grandma and Grandpa.

Later, our daughter prepared an incredible DIY taco and tostada buffet for dinner, and yes — every birthday needs cake! She made a delicious vegan strawberry shortcake with vanilla ice cream that hit the spot. 🍓

And the flowers… oh my goodness, you know how I love flowers! I was gifted two stunning hanging baskets and two vibrant bouquets — a total color bath and sensory treat. 🌸💐

It was a peaceful, joy-filled day surrounded by people I love. ❤️

🌿 Have you tried black cumin seeds?

I like to grind black cumin seeds (also called Nigella sativa) in my little mini grinder and store the powder in a small glass container—ready to sprinkle, stir, or simmer into meals throughout the week! ✨

This tiny seed packs a powerful nutritional punch:

🖤 Rich in antioxidants
🖤 May support immune health
🖤 Contains thymoquinone, linked to anti-inflammatory and anti-microbial effects
🖤 Supports digestion and may help regulate blood sugar and can help reduce LDL cholesterol and triglycerides.

Instead of black pepper, I use ground black cumin on:
✔️ Steamed veggies & greens
✔️ Fresh salads
✔️ Soups, stews & lentil dishes
✔️ Grains like quinoa or brown rice
✔️ Oil-free dressings & dips

It adds a subtle, earthy warmth with a hint of bitterness—like black pepper but deeper and more complex.
