Pistachio Fluff!
Makes 4 servings
Approx 8 Net Carbs per serving
INGREDIENTS:
1 block 8oz softened Cream Cheese
1 cup COLD Heavy Whipping Cream
1 packet SF pistachio pudding
DIRECTIONS:
Using a mixer, whip cream cheese, add HWC and whip until peaks form. Incorporate the pudding powder slowly.
We topped ours with keto Ready Whip and Lilly’s Dark Chocolate Chips

I finally found the perfect way to make onion rings! Chaffle batter!!! I was thinking lst night about trying to find a good recipie for onion rings. I really miss them because we always have them with our phylly steak sandwiches or sloppy joes, but all the recipies I've tried (coating them with cheese, almond flour or flax seed) always come out nasty. But then I thought, what about chaffle batter?? I tried it today and they came out awesome! They taste just like restaurant style onion rings!! and, their low carb! Heres the recipie I used:
BATTER
2 large eggs
1/3 cup almond flour
1/2 Tb coconut flour
1/4 ts baking powder
dash salt (im sure you could also add garlic or onion powder too)
*water to the if needed (but batter should be fairly thick)
1 medium yellow onion, cut in rings
Mix all chaffle ingredients in bowl, then dip onion rings in batter. Fry in hot oil till golden.
I got about 8 to 10 onion rings out of the batter. For a whole serving that would equal about 400 cal, 22 g fat, 10 net carbs and 3 g protein

Dash MyMug mini ice cream maker - base recipe
1/4 c. Whole Milk, plain Greek yogurt 2 T heavy whipping cream 1/2 c. Coconut cream, unsweetened 2 T powdered sweetener of choice
Carbs: 4.1 g Protein: 6 g Fat: 31.5 g Calories: 342
Mix it up. Set your MyMug spinning and pour this mixture in and set a timer for 15 minutes.
Tonight I’m having key lime pie ice cream. I added a little key lime juice to the base. Then I mixed almond flour, butter and brown sugar for the “crust” which I dropped into the maker in tiny ball shapes

My supper tonight Spaghetti squash casserole. Here is the recipe Medium size spaghetti squash cut in half stem wise. Clean middle of seeds. Put pat of butter and salt and pepper. Cover with foil. Bake 40 min 350. While that’s cooking sauté 1 lb ground Turkey add veggies you like. I add mushrooms and baby spinach. I use jar of Rao’s sauce because it’s Keto / low sugar. Let simmer. When squash is done use fork to turn into spaghetti all the way to skin. Use the casserole dish to mix everything together and top with mozzarella. Bake for 10 min till cheese is melted. At 350

All that's left of the fathead pizza I made tonight
Dough was made with:
1 and 1/2 cups mozzarella
2 Tbsp cream cheese
3/4 cup almond flour
1 egg
Melt (I did this in microwave) cheese and cream cheese together then stir to mix
Add rest of ingredients (I added garlic powder, onion powder and basil)
Knead thoroughly (I recommend oiling your hands for this process) until well blended and doughy
Move to parchment paper on top of baking sheet and form into pizza shape (dough was slightly sticky but I showed it who's boss after a little struggle and a lot of bad language)
Place in preheated 425 oven and bake 8 mins (may require more time depending on thickness)
Remove dough from oven and add toppings then put back in oven for another 6 mins or so
My edges got a little over done because I turned the broiler on for a minute or so at the end but didn't detract from the pizza awesomeness

Keto Zuppa Toscana with ALL Aldi products
Instant pot instructions
1. 2 packages ground mild Italian sausage, 2 diced yellow onions, and about 6 cloves garlic - cook on sauté until meat is browned. Turn off pot
2. Add 1 package radishes (sliced), 2 boxes chicken broth, and a good sprinkle of Italian seasoning (best guess is 3-4 tablespoons)
3. Cook on manual high pressure for 10 minutes
4. Quick release pressure and mix in kale (about 2/3 bag) and about 1/2 cup heavy cream.
5. Spoon into bowl and add some shredded Parmesan or mozzarella on top

I've baked with coconut flour and there is a definite texture issue. Is almond flour better? Also, can you bake with Stevia like you can with Sugar or Splenda? Thanks everyone! I'm trying to get rid of the white stuff in the pantry for everyone's health (and my sanity!)

I made modified egg roll in a bowl with air fried tofu! All ALDI.
(4 servings) 
1 bag coleslaw mix
6 Bella mushrooms, sliced
1 green onion, sliced
1 tbsp sesame oil
Garlic & onion powder & pepper
Ginger paste
1 tbsp sriracha
Splash of lime juice
1/4 cup soy sauce
Sautée in pan until soft.
Tofu:
1 package tofu, pressed for 15 min to remove water (put a cutting board and book on it)
Lightly coat with sesame oil, garlic powder & some soy sauce
Put in air fryer at 400* for around 25 minutes
I had to do two batches.
Each serving of the egg roll bowl got 4-5 pieces of tofu on it

Low Carb Taco Soup
1lb ground beef
1 pkg taco seasoning or 3 TBS of my seasoning
2 cups water
1 TBS sugar substitute
1 cup frozen corn
1 can 14oz hunts diced tomatoes
1 can 14oz pinto beans/drained and washed
Brown your meat. Add in all the ingredients together and bring to a boil. Reduce heat and simmer for 5 min.
I like to top it with shredded cheddar cheese and sour cream!
To make it Keto, leave out cirn and pinto beans.
Enjoy!

Cheesy Brussels with Bacon
4 cups Brussels quartered
6 slices cooked bacon
1 oz cream cheese
2/3 cup Heavy whipping cream
1/2 cup shredded cheddar cheese
1/4 cup of Gruyere or mozzarella
1/4 cup Parmesan
1 tsp garlic powder
1/2 tsp paprika
Sauté bacon and remove once cooked to drain from oven ready skillet
Add Brussels and sauté until brown. Mix cream cheese and HWC and pour over Brussels. Add others cheese and mix. Sprinkle bacon and put in 350 degree oven for 15 mins until bubbly.
Enjoy

Baked Broccoli chips!
Preheat oven to 400 degrees.
In large bowl Blend broccoli crowns from 1 head of broccoli- in blender until shredded into small pieces.
Add to mixture:
1 egg
2 tbsp almond flour
1 cup Parmesan cheese
1 cup Colby jack cheese
1/4 cup bacon crumbles
Season with Creole Seasoning
Mix up well and spoon onto greased parchment paper and flatten with fork. (I used spray avocado oil).
Make sure to leave some space between eat chip
Bake for 10 min., flip and the bake 10 more min. Let cool and enjoy with ranch or dressing of choice

Keto peanut butter and chocolate no bake bars ❣
Ingredients:
3/4 cup of almond flour
2 Tbsp butter
1/4 cup powdered swerve or monk fruit
1/2 cup of peanut butter
1 tsp vanilla
Topping:
1/2 cup sugar free chocolate chips
1 Tbsp coconut oil
Instructions:
Combine the main ingredients (everything but the topping ingredients) and mix together with a pastry cutter (can cut in with two butter knives if you don’t have a pastry cutter) until well blended
Press into an 8” x 8” pan
Melt chocolate chips and coconut oil In microwave until smooth in 30 second increments
Pour over the top of peanut butter mixture
Refrigerate for 1-2 hours
Cut into 8 servings
Enjoy!

SKILLET KETO CABBAGE WITH BEEF
1 pound ground beef
3 C diced cabbage(I cooked in microwave 2 min to start softening)
1 can Rotel
1 teaspoon chili powder
1 teaspoon garlic powder
Salt & pepper
1 C cheddar cheese or pepper jack cheese
Brown beef in skillet, add cabbage and
other ingredients
When cabbage is soft enough for your liking,
Top with cheese-cover for 3-5 min.

I use these all the time. I make mine in a waffle maker. They are low in calories, super easy to make. Leave in waffle maker about 5 minutes, if it isn't coming out easy, its not ready! Make sure there are no lumps in your almond flour!
