llnesses, Tammera authored Our Journey With Food, in 2015. Tammera began actively mentoring Holistic Nutrition and Holistic Nursing Clinical Practitioners, in 2015. In 2016 she joined the adjunct faculty at Portland Community College CLIMB Center where she shares her years of knowledge with students in the Holistic Nutrition Therapy program. Additionally, Tammera serves on the National Association of Nutrition Professionals Board of Directors (NANP) and organization committees and the Oregon Holistic Nurses Associasion. Over the years she has gained National Board and Advanced Certifications to expand her knowledge and effectiveness in the area of Holistic Nutrition and Integrative Health Care options. Tammera established an Integrative Medicine partnership in 2006 where she worked in a clinical setting with DO’s, FNP-C, Acupuncturists, Herbalists, ND’s and others. In 2015, Tammera changed to a virtual office model, making it possible to meet with clients with greater flexibility, time and cost savings. Tammera’s clinical and education practice is ever-evolving to meet the needs of clients, and fellow practitioners who wish to empower others through holistic health. A Native of Oregon, Tammera is avid about spending time outdoors. She enjoys history, cooking, canning and food preserving, and exploring in her free time. Something to think about

For the last few weeks, I have researched and written on stress factors and ways to improve resiliency to update my book Empty Plate. My coauthor Kathleen Bell and I wrote Empty Plate: food, sustainability, mindfulness in 2020, during the height of COVID-19, an incredibly stressful time for the world.

There are many conversations about stress and its harmfulness, but little about its benefits in our daily lives. For resilience that supports us through the uncertainties of life, we need more eustress (good stress) than distress (bad stress). Researchers have learned more about what happens during sleep and its role in building sustainable resilience during the last decade. I find it interesting that Maslow's Hierarchy, formulated in 1943, still clearly illustrates the value—in fact, a must-have foundational element of—my passion: Nourishment through food, water and sleep.

I reflect on Maslow's Hierarchy of needs and the perceived stressors of the second tier of importance—safety, maintenance of health, and equity. When these elements are sources of daily struggle, the ability to experience the nourishment elements of the foundational level is greatly compromised. When individuals experience more distress in their lives, their sleep quality, digestive microbiota, ability to absorb nutrients, and brain chemistry are all impacted, increasing all-cause mortality risks. Recent science has even shed light on a specialized "cleaning system" where cerebrospinal fluid is pumped through the brain to carry away toxic compounds that accumulate during wakefulness - while we sleep.

When a population subsists on marginal nourishment from ultra-refined foods, a cascade of health challenges, including heightened anxiety, memory loss and sleep deprivation, are greater. Food inequity is rampant in America, not because we do not have enough food, but because those in greatest need are the least likely to have access. When a body is well fed, it can rest in comfort.

What a perfect way to spend an early spring snowstorm day - reviewing the Rainbow Diet: A Guidebook to the Science and Art of Colorful Foods for Health and Well-Being - for NANP continuing education credit and recommended reading lists. Dr Minich is a favorite presenter and author amongst this national organizations professional nutrition members.

This book is a delight to the eyes with beautiful color photography and it feeds the mind with evidence informed and research science!!
Oh did I mention comprehensive lists and mouthwatering recipes too!

Halloween is now the launch for all things holiday. The holidays are filled with food; many are no longer made in homes but in factories, restaurants and home delivery services. With the convenience comes ever-increasing costs and shortage challenges. One aspect we seldom mention is food inequity among the underserved, elderly and minority members of our communities. I found the following statistic interesting and may write a seasonal series on food cost increases.

Americans spend nearly $12B annually on costumes, decorations, and candy. Each household spent an average of $51 on sweets this year, a cost jump due to a nearly 50% rise in cocoa prices since February.

My How Time Flys
On October 25, 1955, the first domestic microwave ovens went on sale. Born from World War II-era radar technology, this affordable kitchen appliances now sit on millions of counters in waiting rooms, hotels, office break rooms, dorm rooms, B&Bs, RVs, workshops and outdoor and indoor home kitchens across the United States. In 1955, under a licensing agreement with Raytheon, the Tappan Stove Company brought the first consumer microwave ovens to the U.S. market with a price tag of $1,300. In 1965, Raytheon acquired Amana Refrigerators, Inc. and, in 1967, introduced to the U.S. market the first countertop model of microwave ovens (it sold for $495 retail and was smaller, safer, and more reliable than previous models). Only 1% of households in America in 1971 had a microwave; by 1986, the number had risen to 25% of U.S. households.

During this period, science and technology seemed to promise an ever more convenient, beautiful future for the denizens of post-war America. Each product was better, faster and sleeker than the last. With the increase of premade, microwave-packaged and convenience foods and economic growth came ever-expanding landfills and islands of plastic floating in the oceans.

Additionally , Tammera has held lead instructor roles with PCC Climb Centers Functional Nutrition Program, and taught community nutrition classes for Umpqua Community college.

Additionally, Tammera serves on committees for the National Association of Nutrition Professionals (NANP) and Special Advisor for the Oregon Holistic Nurses Association (OHNA). Over the years she has gained National Board and Advanced Certifications to expand her knowledge and effectiveness in the area of Holistic Nutrition and Integrative Health Care options.
