Prepped some quinoa salad to have on hand for the week. I love this recipe because I can use it as a side dish or add some protein (I usually add chicken) and it becomes a meal. I always eat it cold. Double bonus is that all of my girls like it too! 🙌🏻🙌🏻
Recipe:
1 cup quinoa
2 cups water
1 cup chopped cucumber
1/3 cup chopped parsley
1/3 cup chopped mint
1/3 cup chopped red onion
1/2 cup chopped roasted pistachios
1 can drained & rinsed chickpeas
4-5 tbsp lemon juice
1/4 cup evoo
1/3 cup crumbled feta
Salt & pepper to taste
Directions:
Mix the quinoa and water in a small pot. Bring the water to a boil before reducing the heat. Cover the pot, and allow the quinoa and water to simmer for 15 minutes. Remove the quinoa from the heat, and fluff it with a fork. Set it aside, and allow it to cool. Then combine the cooked quinoa, cucumber, parsley, mint, red onion, pistachios, chickpeas, lemon juice, and olive oil in a medium bowl. Top with feta, salt and pepper to taste. Store in fridge! Enjoy

Trying to get back to my normal routine now that our baby girl is 2 weeks old. Started by cooking something quick and super delish! I was so happy with how it turned out. Introducing 👉🏻The Cauli Rice Burrito Bowl!
Here's what I did:
- 1 bag of riced cauliflower (or cauliflower riced in a food processor)
- Coconut oil
- Shredded rotisserie chicken
- 1 can unsalted black beans
- 1 can diced green chiles
- 1/2 - 3/4 can Hatch Green Chile Enchilada Sauce
Sauté cauliflower rice in coconut oil until it's softened. Add chicken, black beans, green chiles and enchilada sauce. Continue to sauté until everything is warm and mixed together. Eat up! Grillin...🍴 Found this Badia Mojo Marinade on vitacost.com. The chicken turned out so flavorful and moist. I just marinated the chicken for about an hour and put it on the grill. Then brushed the chicken with a little extra marinade towards the end of it cooking. 👌🏼

Homemade Trail Mix Yogurt for breakfast! I ☝always make my own trail mix because store bought ones are generally filled with 🚫added sugar! .

In this recipe I made enough for 1 serving of yogurt. But it can easily be doubled tripled etc. to have on 👐 hand as a snack. .

Here's what I did:
Trailmix
1 tsp sunflower seeds
2 tsps raisins
2 tsps walnuts
1 tsp peanuts
1 tsp date crumbles
Sprinkle of unsweetened coconut flakes
Mix it all together and then pour on top of 1/2 cup Greek yogurt.

Oh this Basil Pesto Pasta 🍝😍 I'm in love! Here's what I did 👇
- cook 1 8oz box Quinoa Pasta (from )
- 1 packet Simply Organic Sweet Basil Pesto Sauce (make per directions)
- Rotisserie chicken shredded
- steamed broccoli and cauliflower
- canned unsalted peas, drained
- Parmesan
Mix it all up and devour!

This breakfast burrito 😍 just sauté onion, broccolli, cauliflower, spinach in coconut oil with minced garlic and Herbamare seasoning. Then add cooked chopped turkey bacon. Then pour in beat eggs 🍳. Let the eggs cook with everything in it. Add melted cheese and allow it to melt. Put it all in a tortilla add avocado and serve with salsa 👍

Get in my belly! This open face sammie was the bomb! 💣
My hubby just sautéd red onions and minced garlic in coconut oil (our favorite is 's brand coconut oil) and then added spinach until it was wilted. Toasted some ezekiel bread and topped it with turkey bacon, runny egg 🍳 and the onion spinach mixture! Perfection! 👌

I ❤️ these Dijon Chicken Tenders! So easy, so flavorful, and even better the next day!
Here's what I did:
Dijon Chicken Tenders
-1 lb Chicken Tender
-3 tablespoons Dijon Mustard
-1 tablespoon Apple Cider Vinegar
-1 1/2 teaspoon Italian Seasoning
-1 teaspoon Chili Powder
Pepper
Mix all the ingredients together and dip chicken in the marinade. Place chicken on baking sheet with parchment paper. Bake at 350F for approximately 25-30 minutes. I served it with sautéed Brussel sprouts and red onion.

Easy peasy stirfry! I just used rotisserie chicken, frozen brown rice, sautéed carrots, red onion, broccoli & corn in coconut oil and herbamare seasoning. The sauce was a mix of a Braggs liquid aminos, sesame oil, peanut flour and Sriracha all from . Added some scrambled eggs and it was perfection! 🙌

If a Moroccan & an Italian made a food baby 👶 it would be THIS delicious "pasta" 🍝! I used spaghetti squash as the pasta and Mina Harissa Moroccan Red Pepper Sauce (from ) for the sauce 😉.
Here's what I did:
- Spaghetti Squash
- Italian Turkey Sausage, casings removed
- Sun Dried Tomato, julienned
- Approx 3 tbsps Coconut Flour (gives a Parmesan effect)
- 1 tsp Italian Seasonings
- 1/2 tsp Garlic Powder
- 1/2 a jar Mina Harissa Red Pepper Sauce
Cut Spaghetti Squash crosswise NOT lengthwise (this makes it so both sides fit on one plate). Get a microwave safe plate and fill it with enough water to cover the bottom of the plate. Scrape out the seeds. Place the spaghetti squash halves open face down. Microwave for approximately 8 minutes depending on size. When it is cool enough to handle scrape the insides out with a fork. While the spaghetti squash is cooking place the the Italian turkey sausage on a pan sprayed with non-stick spray. Cook on medium heat until cooked through. I'm one hungry pregnant lady this morning! 😁 Luckily my hubby knew just want to do! Eggs, bagel, turkey bacon and roasted sweet potatoes!
For the sweet potatoes:
-Sweet potatoes, chopped
- Herbamare seasoning (from )
- minced garlic ()
- coconut oil ()
Place coconut oil, garlic and sweet potatoes in a pan on medium heat. Cook with the lid on stirring occasionally. Once the potatoes soften take the lid off and sprinkle with herbamare seasoning. Cook until browned and crispy.

Open faced egg salad Sammi using my homemade coconut flour wrap! I used cottage cheese in my egg salad instead of mayo (trust me it's good 👍)
Here's what I did for the flour wrap:
- 1 tablespoon coconut flour (from )
- 3 egg whites
- 1 teaspoon Mrs. Dash Original

Love this black bean soup!🍵 So easy to make and super filling!
Here's what I did:
- 1 cup bountiful Black Bean Soup Mix (from ) - has black beans, black eyed peas, pearl barley and navy beans
- 4 cups of vegetable broth
- chopped celery
- chopped onion
- 1 tablespoon bean soup seasoning mix (also from )
Place the broth and bean mix in a medium stock pot and bring to a boil. Reduce heat to a low simmer and cook for 1 1/2 hours. The last 30 mins put in the onion and celery. Black bean pasta for dinner tonight! I know it looks a little strange, but don't judge a book 📕 by its cover! It actually tastes sooo good and has 25 grams of protein per serving! Having Monday off for Martin Luther King day means breakfast burritos made by the Hubs! 💕👍
Here's what he did:
- Ezekiel Tortillas
- Turkey Bacon
- Cheese
- Simple Truth Organic Eggs
- Simple Truth Organic Salsa
Scramble eggs and toss in cheese. Make Turkey bacon cut it up and roll it all in a tortilla. Serve with salsa
