Prepped some quinoa salad to have on hand for the week. I love this recipe because I can use it as a side dish or add some protein (I usually add chicken) and it becomes a meal. I always eat it cold. Double bonus is that all of my girls like it too! 🙌🏻🙌🏻
Recipe:
1 cup quinoa
2 cups water
1 cup chopped cucumber
1/3 cup chopped parsley
1/3 cup chopped mint
1/3 cup chopped red onion
1/2 cup chopped roasted pistachios
1 can drained & rinsed chickpeas
4-5 tbsp lemon juice
1/4 cup evoo
1/3 cup crumbled feta
Salt & pepper to taste
Directions:
Mix the quinoa and water in a small pot. Bring the water to a boil before reducing the heat. Cover the pot, and allow the quinoa and water to simmer for 15 minutes. Remove the quinoa from the heat, and fluff it with a fork. Set it aside, and allow it to cool. Then combine the cooked quinoa, cucumber, parsley, mint, red onion, pistachios, chickpeas, lemon juice, and olive oil in a medium bowl. Top with feta, salt and pepper to taste. Store in fridge! Enjoy
