Today is the last day of the Mission 2 Transition Challenge. With a heavy heart, today is our last day. The purpose of this challenge was to educate and provide resources to transition to a plant based lifestyle. So, what are your next steps?

Next Steps:
1. Access how your feel. Don't just look at the scale. are you sleeping better? Are you still having that afternoon bonk? Do you crave sweets/salt or healthy foods? Do you still have aches or pains?

2. determine what week was the most difficult for you to transition and repeat that week this week. If you have questions or need additional resources, please feel free to email or post to this page.

3.decide if you want to continue our Vegan-Vegetarian-You Choose method of eating?

4. Understand that this is your journey. Only you can decide what is best for your body. Don't feel the pressure to go all in as vegan or plant based. Transition in your own time, if you choose.

5. Stay connected with us via this page and IG. We will have more challenges focusing on transitioning your body and home to a plant based lifestyle.

Friday Question: I am new to cooking veggies. I either burn them or they come out mushy. I need help!

Answer: It can be difficult. Seems like they always cook them so perfectly at restaurants, but I refuse to be charged $8-10 for a side of veggies I can make for under $1.

Friday Question: I am craving salty snacks. I know chips are vegan but know they aren't healthy. Do you have any healthy snack recipes?

Answer: I like to make air popped popcorn,, spritz with a little water to make seasonings stick then add seasonings. I also like roasted chickpeas. Here is a sample recipe, the combos are endless:

Dinner: I enjoy a huge bowl of soup as the weather cools down. My go to soup is a simple lentil soup (basically 1 cup of veggie broth, lentils, carrots, onions, and corn) over a bed of fresh spinach.
TIP: I like to add barley to add some volume to my soups.

Dinner: I try to make a dish for dinner that will last a few days. I never know when I will have to work late or just not feel like cooking. Meatloaves are a great recipe to make as it is easy to stretch for a large family. Plus you can make sandwiches for lunch the next day or crumble into a salad.

Week 3 we are focusing on Dinners. Dinner can be primarily plant-based but if you feel the urge to add in a lean meat, poultry or seafood you can. The strategy behind the Mission 2 Transition program is that if you eat a Vegan breakfast and a vegetarian lunch, your body will crave plant based foods for dinner. You can choose to stay vegan or vegetarian for dinner if you are ready. Some people decide to have one or two dinners a week with meat as they transition...it is all up to you.

If you do include a meat, make sure it is cooked in a healthy way. No frying. Make sure to pick lean cuts of meat such as fish, chicken, turkey, lean beef, ect.
