Now this is a real biscuit! I used the ATK Dream Biscuit recipe and Victoria’s almond/bamboo mix. Added the 4 Tab buttermilk powder that someone suggested to the dry mix. I cut the warm HWC to 1 cup and added 1/2 cup warm water to it. Bloomed 1 Tab yeast in the other 1/2 cup warm water. So in total - still 2 cups of liquid - just 1/2 cup water with the yeast and the other 1/2 cup water mixed with the warm HWC. Biscuit is light and you can break it open with your hands and they do not crumble. Taste is spot on!!

Lowcarb cream cheese crusted pizza...really good!!!
Recipe:
- combine room-temperature or slightly microwaved 8oz cream cheese, 2 eggs, garlic powder, salt and pepper ousting a hand-mixer till smooth then pour into a greased casserole dish. Bake at 375 this golden brown, about 18-20 minutes
- let cool 10 minutes
- top with cooked meat (I used 1/2 hamburger 1/2 sausage, sugar-free pizza sauce, olives, mushrooms, onion, diced jalapeños, banana peppers, mozzarella cheese, etc
- bake about 10 more minutes or until cheese is golden brown

Made meatloaf and cauliflower mac for dinner tonight... the cauliflower mac I did tonight was Easy.
1 bag of frozen cauliflower cooked to Instructions
1/4 or less of cheese of choice
1/2 oz of cream cheese
2 tbls of heavy cream
Salt pepper garlic and onion powder to taste
Bake 350° until golden and bubbling
Will make this again

Home made keto strawberry jam over keto cheese cake ... all ALDI ingredients cept for the sugar substitute (I used lakanto) 4 net carbs total!
Edit: jam recipe
*2lbs fresh strawberry’s (stems and hulls removed)
*1/2 cup lakanto sugar sub
*1 tsp lemon juice
*1 tsp xanthan gum
~ add strawberry’s to pot and smash up a bit
~ cook strawberry’s over medium heat for about 10 minutes until juicy
~ add all other ingredients and mix well
~ I then used an immersion blender cuz I wanted smoother jam

I'm sharing some good news: chicken crust, you'll never go any other way. 1 can 12oz chicken breast, I use the low sodium, 1 egg and 2 lg. handfuls of shredded cheese, I use the Italian style cheese and I eyeball everything so use as much as you want. mix well, season any way you like and bake at 400F until golden brown, let cool and enjoy alone as snack, as bread, as pizza crust or with a dip.

Low carb Berry Cobbler 🔥
Ingredients-
1c fresh blueberries
8-10 strawberries stem cut off & sliced
1 box Duncan Hines Classic Yellow cake mix
1 & half sticks of butter
Optional sprinkle 1-2tbsp of sweetener of choice. I used monkfruit but will skip it next time!
Layer casserole pan with berries, sprinkle cake mix best you can to get it even. Thinly slice butter lay on top cake mix.
Cover with aluminum foil
Bake @ 325-375 for 35-45 minutes
Enjoy!

Heavy Whipping Cream
Ingredients:
8oz Cream Cheese
8oz Heavy Whipping Cream
1/2 C Powdered Erythritol
Instructions:
1. Whip Heavy Whipping cream until stiff peaks form. Transfer to separate bowl(if using stand mixer)
2. In another bowl whip the cream cheese and sweetener until light & fluffy. Add 1/3 of whipped cream and mix well.
3. Slowly fold in remaining whipped cream then serve.
This makes 4 servings. 4 net carbs 5g protein and 40g fat per serving

For crust-Smash and brown(both sides)sausage in small cast iron skillet
Drain grease
Add low carb marinara sauce-just a Tablespoon or so
Sprinkle with garlic salt & Italian seasoning
Top with lots of mozzarella cheese
Pepperoni
Tomato and peppers from my garden
Bacon bits
Top with parmesan cheese

Chicken Nuggets! Keto style!!
10oz canned chicken (Costco)
1/2 cup of shredded cheese (I used pepperjack)
1 egg
Mix together
Scoop and flatten
I sprinkled with bagel seasoning (so good!)
Airfryer at 400F
Cook 14 minutes, flipping halfway
Spray first, they stick!
You can also cook them in the oven
450F for about 20 minutes flipping halfway
I used a cookie scoop and got 11
I don’t have other counts

This appears decent for smoothies or homemade reeces - 9.2g carbs of which sugars 4.2g

Ohhhhh! I think I’m in love! This one is perfect for Fall! Sweet Cinnamon Whiskey! I made a small batch, thinking I’d like the lemon drop vodka better, but this is really good!
4 cups water
1/2 cup brown Swerve
5 cinnamon sticks (or more, I think it needs a couple more)
Dump it all the pressure cooker, sauté and stir for about 5 minutes. Turn pot to high pressure and set timer for 40 minutes. Let it release naturally and cool to room temperature. Then add 2 cups whiskey, I used Jack.
It’s very mellow, easy to sip on

I made fat bombs!
- Melt down 5.3 oz (about 1 1/4 cup) cacao butter in a double boiler, then add 3.5 oz (about 1 1/2 cup) cocoa powder, 2 tsp lakanto powdered monk fruit, 1 tsp vanilla ( I used almond). Pour into a mold and sprinkle with himalayan sea salt.
You can also sprinkle nuts or coconut into your mold before you add the chocolate mixture.

Nutty snowballs - a sweet treat next to the coffee.
1 cup walnuts.
1 cup pecans.
3 heaping tablespoons of ground coconut.
2 tablespoons solid coconut oil or nut butter to your taste+1Tbs grounded flaxseed.
1 teaspoon vanilla extract.
Liquid stevia or sweetener dissolved in a little water.
2-3 Tsp if water.
Pinch of salt.
For coating - 1/2 cup ground coconut and some sweetener (Erythritol or monk fruit)
In a food processor, grind nuts with coconut into small crumbs.
Add the rest of the ingredients. add a little water to create a dough that is easy to roll.
In a deep bowl mix coconut and sweetener. Form balls and roll them in the dry coconut mixture. Transfer to a sealed box with the remaining coconut from the bowl.
Keeps in the fridge for two weeks, but it won't last that long ..
Substitutions:
You can use any other nut, but pay attention to the carbs... Cashews, for example, are a carbs bomb... Therefore, if you choose to replace the coconut oil with nut butter, it's better not to use cashew butter. The coconut oil helps the balls to solidify in the fridge. If you replaced it, add a tablespoon of ground flax seeds to the paste. Amounts of sweeteners ? according to your taste. Start with a small amount and add until you reach the sweetness you like. The salt is critical, don't give it up.
