🍲 Nigerian Egusi Soup Recipe 🇳🇬
Indulge in the rich flavors of Nigeria with this comforting Egusi Soup! 😋
Ingredients:
1 cup ground Egusi (melon seeds)
2 cups chopped spinach or bitter leaf
1/2 cup palm oil
1 pound assorted meat (beef, goat, or chicken)
1/2 cup crayfish
1 red bell pepper
1 onion
2-3 Scotch bonnet peppers (adjust to your spice preference)
2 tablespoons ground crayfish
2 stock cubes
Salt to taste
Instructions:
Blend the red bell pepper, Scotch bonnet peppers, and onion into a smooth paste.
Heat the palm oil in a pot until it becomes clear (not bleached).
Add the blended pepper mixture and fry for about 10 minutes until the oil separates.
Add the ground crayfish and Egusi, stirring continuously to prevent lumps.
Add the meat and stock cubes, then cover with water and let it simmer until the meat is tender (about 30-40 minutes).
Stir in the chopped spinach or bitter leaf and simmer for an additional 10 minutes.
Taste and adjust the seasoning with salt and more crayfish if needed.
Serve your Egusi Soup hot with fufu, pounded yam, or your favorite Nigerian side dish. Enjoy! 🍽️
