Bianca Church, RHN Holistic Nutritionist with 25 years of nutrition coaching and teaching experience.; Host of Learn, Eat, & Be Well-France; MSc.

Clinical Nutrition Candidate; Nutrigenomics. In 1998 I began my journey in holistic health by working for a Master Herbalist in the Chilcotin Plateau of British Columbia. After moving back to Ontario in 2000, my home province, I continued in the holistic health industry by joining a nutritional supplement company that manufactured premium nutraceuticals for both humans and horses. By 2004 I decided to formalize my knowledge in nutrition by enrolling into the Natural Nutrition diploma program at the Canadian School of Natural Nutrition. By 2005 I was the recipient of CSNN’s graduating Award of Excellence and Award of Merit. The next year, 2006, I graduated from the International Institute of Iridology, where I completed my certification in Advanced Holistic Iridology and simultaneously completed my training as a Certified Healthy Breast Practitioner with Sat Dharam Kaur. I spent 12 years teaching and privately tutoring numerous CSNN students, coordinating and developing CSNN’s Natural Nutrition curriculum, CSNNs online platform, and “Learn, Eat, and Be Well” - SW France, an educational tourism program for nutrition graduates, and to date have mentored 135 CSNN graduates to develop their own successful holistic nutrition practices. Today I am focusing on a Master’s of Science in Clinical Nutrition at Aberdeen’s Rowatt Institute, I am helping clients in need of nutritional guidance, hosting an annual Learn, Eat & Be Well – SW France from my own home https://learneatbewell.com/ and still helping students with their case studies and/or developing their nutrition businesses through my business mentorship program ‘Wellness Business Systems’. I have a strong belief in the power of natural nutrition and my goal is to share my knowledge through education.

At Learn, Eat, & Be Well – SW France, wellness reveals itself in many forms. One of them is the field trip where we simply walk the ancient stone paths of the 900-year-old Abbey and Church at Saint-Amand-de-Coly. Tucked in a quiet valley of green forests and honey-coloured stone, this sacred site invites calm, reflection, and connection. The only sounds are birdsong and footsteps with echoes of those who have walked here for centuries in search of healing and renewal.

It’s a great fit because I am working on course design, assessment practices, and student experience. It is very different from clinical nutrition, but I love where this is going.

One of the highlights of the week is market day. Midweek, we visit a local village for a truly authentic French market experience. These bustling open-air markets offer everything needed for nourishing meals: fresh produce, artisan cheeses, farm eggs, herbs, organic bread, fish, meats, and sometimes a fashionable accessory or two.
What I love most is the energy: vendors greet you with genuine warmth, and locals gather not just to shop, but to connect. They catch up on family news, discuss politics, and yes, share some local gossip.
Experience buying and cooking food from the local market at Learn, Eat, & Be Well – SW France. Where eating local foods is a joy because you know it’s been grown and sold with care.

This is Learn, Eat, Be Well - SW France
Flashback moment - 2015
The evening markets in the Dordogne are magical and this photo from Les Eyzies brings it all back. On Mediterranean Day during Learn, Eat, & Be Well, we enjoyed one of the few moments in our week where bread and wine were on the menu.
This wasn’t just any market. It was a gathering of the village: bakers, farmers, winemakers, and families all came together. You picked your meal from a handful of local producers (roast duck breast, beef, chicken, country bread, crêpes) then found your spot at one of the long communal tables.
All you had to bring? Your utensils and a big appetite.
We laughed, shared plates, and stayed for the music that followed. This is how food and community come together in rural France and exactly why this program was born here.

Hello. During exam preparation for my MSc in Clinical Nutrition, I had to deduce if it was more difficult to fat adapt someone with gluteofemoral fat vs. someone with visceral fat. I have posted my summary below. I think it aligns well with the chart I posted last week on Carbohydrates during fasting/starvation vs. exercise. Hello fellow nutritionists and students, I created this chart recently while preparing for an exam in Clinical Nutrition, and I thought it might be helpful to others, especially those who like having a quick reference for how the body uses carbohydrates in different states. This comparison outlines some key metabolic differences between fasting/starvation and exercise.
It is simplified as a quick reference only but highlights the patterns that matter most in practice.
If you are working with athletes, fasting clients, or those navigating low-carb adaptations, I hope this helps frame the big picture. Feel free to use or adapt it.

My Story

I am a deeply committed Holistic Nutritionist who has been in the holistic health industry since 1998. I started my career in holistic health as an assistant to a Master Herbalist. Then in the year 2000 I moved into Nutraceutical sales for the equine industry. In 2004 I chose to obtain a formal education in Natural Nutrition and in 2005 was the recipient of CSNN’s graduating Award of Excellence. I am also a graduate of the International Institute of Iridology Advanced Holistic Iridology, a Certified Healthy Breast Practitioner, and have over 5000 hours of teaching and curriculum development experience. In my role as Academic Advisor in Distance Education and through my experience in marking numerous tests, and case study analysis, I have identified key areas where students, graduates, and professionals could improve their chances of success and make more efficient use of their time. I have designed my programs to help students complete their studies quickly and effectively and to build a successful practice in less time than if they were to do this on their own.
