Caramelized Butternut Squash with Feta, Walnuts & Cranberry-Honey Glaze

A perfect balance of sweet, savory, and warm fall flavours. This dish is simple to make and looks beautiful on any table.

Ingredients
• 1 medium butternut squash (about 2 lb), peeled and cubed
• 2 tbsp olive oil
• 1 tbsp maple syrup or honey
• Salt and black pepper, to taste
• ½ tsp dried thyme or fresh rosemary (optional)
• ⅓ cup crumbled feta
• ¼ cup toasted chopped walnuts
• 2 tbsp dried cranberries

Cranberry-Honey Glaze
• 2 tbsp honey
• 1 tbsp balsamic vinegar
• 1 tbsp cranberry sauce or jam

Directions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
2. Toss cubed squash with olive oil, maple syrup, salt, pepper, and thyme or rosemary. Spread evenly.
3. Roast for 25–30 minutes, stirring halfway, until golden and caramelized.
4. In a small saucepan, whisk honey, balsamic vinegar, and cranberry sauce. Warm over low heat for 3–4 minutes until slightly thickened.
5. Transfer roasted squash to a serving dish. Top with feta, walnuts, and dried cranberries.
6. Drizzle with the warm cranberry-honey glaze and serve immediately.

Prep Time: 10 minutes Cook Time: 30 minutes
