What a gorgeous bounty of fruits and vegetables August brings!

I have already enjoyed the most spectacular, crisp and sweet nectarines

I have corn ready for a crisp salad with seedless cucumber and stunning heirloom tomatoes

The snow peas and sugar snap peas and in my refrigerator just waiting to become some delicious new recipe.

Did I mention the polyphenols, antioxidants, fiber and vitamins that can reaped from them all?

There are so many benefits to flaxseeds that it’s hard to imagine how they fit all that goodness into one tiny shell!

From flaxseed oil which you can simply drink a small sip from, to flaxseed flour you can add to your baking or coating for crispy batters, or to the seeds you can toss into soups, salads and smoothies, the possibilities for adding them to your diet are endless!

Easiest way to start? Pick up some seeds at your local market and add a teaspoon full to something already in your rotation. No real taste, major health benefits.

Building a meal from seasonal produce not only keeps your menus fluid and interesting, but it better allows you to source fresh, local fruits and veggies. It’s simply the best way to enjoy produce if you’re lucky enough to have that access, and the vitamins, minerals and fiber in this seasonal assortment is bursting with healthy benefits!

As May begins, these are the month’s choicest options:

We’re talking more about immune heroes and today it’s Vitamin D!

I was inspired by a beautiful interval run outdoors today (sunscreen on of course!)

Vitamin D strengthens the pathogen-fighting effects of immune cells (like T-cells and macrophages) helping the body to fight infection AND it can reduce symptoms of depression, helping to regulate neurotransmitters.

Sunshine is my favorite method of Vitamin D intake but mushroom varieties like maitake, shiitake, and portobello can also offer vitamin D2 or as can fortified milks.
