Beef Stew with Potatoes and Carrots 🥕🥔

Ingredients:

1 kg of beef, cut into cubes (I used chuck)
1 medium onion, finely chopped
3 medium carrots
4 medium potatoes
2 tablespoons of olive oil or vegetable oil
1 beef or beef broth cube
2 cloves of garlic, minced
salt/ground black pepper to taste (I also use various seasonings, I love to spice things up)
1 tablespoon of turmeric
1 cup of water
chopped coriander to taste

Instructions:

In a pressure cooker, sauté the onion in olive oil or vegetable oil until it becomes translucent.
Add the garlic, beef broth cube, and salt to the pressure cooker.
Sauté for a little longer and add the beef cubes.
Stir and sauté the beef until it's seared.
Add the water, stir, and close the pressure cooker.
Let it cook over medium heat for 35 minutes after reaching pressure.
After this time, turn off the heat and let the pressure release naturally.
Add the carrots, chopped parsley, and potatoes.
Let it cook for another 15 minutes.
After this time, turn off the heat and wait for the pressure to release naturally.

• 4 medium potatoes, cut into cubes
• 2 tablespoons olive oil
• 1 teaspoon paprika
• Salt and pepper to taste
For Green Salad:
• 4 cups mixed greens (lettuce, arugula, spinach)
• 1/2 cucumber, sliced
• 1 tomato, diced
• 1/4 red onion, thinly sliced
• Your choice of vinaigrette dressing to taste
Instructions:
1. Prepare Grilled Chicken Breast: In a bowl, mix lemon juice, minced garlic, salt, pepper, and olive oil. Add chicken breasts to the marinade and let them marinate for at least 30 minutes in the refrigerator. After marinating, grill the chicken in a skillet or grill until fully cooked, about 6-8 minutes on each side. Set aside.
