Cassava fusilli pasta with organic: marinara (with ground turkey), slivered sauteed garlic, turmeric, and mixed mushrooms. Topped with organic nutritional yeast (as a parmesan alternative). Free of gluten, dairy, and the other most-common allergens. Yum city. Garlic 🧄 is a natural antibiotic, BTW. Turmeric is an anti-inflammatory.

This will go down in history as one of my all-time favorite dinners: shrimp 🍤 "parmesan"❣️ I marinated jumbo shrimp (shells/tails removed) in lemon juice, olive oil, and garlic; then into a bowl for a light dusting of tapioca flour. Baked in my new(ish) air fryer with a drizzle of OOO until crust was crunchy and slightly brown. Then out of the oven for a topping of organic tomato sauce and a layer of Daiya cheeze shreds, and back in the air fryer to melt. The shrimp wound up tasting similar to lobster. 😋 Free of gluten, dairy, soy, and nearly all of the rest of the most common allergens (except shellfish). Yum city.

For Alex (since we're not sure yet if he's still allergic to tomato, and the cheeze shreds have some questionable ingredients for him), I topped his encrusted shrimp with lemon juice for the piccata treatment. He loved it so much, that he ate a couple more while putting away the leftovers.

Pic #2 looks a bit like the Mitten State (lower peninsula). What say you, my fellow Michiganders?

Finally! Woot! 🥳🎉 I concocted a more allergy-friendly version of Thai Peanut Sauce. It's loosely based on the recipe in my first comment. I subbed most of the ingredients, but this rivals the TPS from my fav Thai restaurant.

My ingredients: Barney's almond butter (warmed first in glass jar that will house sauce), agave, thick coconut milk (from a can), Dynamic Health organic coconut aminos, Thai Kitchen red curry paste, organic jalapeño sauce. Yum city❣️ Free of: soy, gluten, dairy, peanuts.

Caveat: So scrumptious that it's hard not to put it on everything. 🙂

"Dress Whites" shrimp piccata dinner for NYE. I took jumbo shrimp, marinated them with a combo of lemon juice, OOO, pepper and a hint of salt; lightly dusted them with a combo of tapioca and potato flours, then into the air fryer to brown and bubble to scrumptiousness. On stovetop: boiled the remaining marinade with more lemon juice, water, and some of the leftover flour to make the lemon (piccata) dipping sauce. Paired with a simple steamed cauliflower, one of my son's favorite veggies. Free of gluten, dairy, and soy. 🙂🥳🎉

For many years (since I had to give up gluten, soy, and dairy), a bagel with cream cheese and lox was not possible. Finally, a few years ago, gluten free bagels arrived. 🙂 But I still had to use guac or avocado instead of cream cheese.

Today...tada❣️ Finally...an almond-derived shmear that really tastes like cream cheese. Oy what joy!

There are now bakeries making very good GF bagels. 🥯 None in my immediate area, so I have yet to taste one. My favorite store-bought bagels are Canyon Bakehouse Everything, but those are hard to find here, too.

Here's today's lineup: Trader Joe's Everything bagel, Kite Hill cream cheese alternative (from almonds) available @ Whole Foods Market, Changing Seas responsibly caught smoked salmon (also ), organic Roma tomatoes, and thinly sliced onion. Yum city❣️

This is the closest we got to latkes this year: Chicken-Potato-Spinach Croquettes. Two breasts from a Whole Foods rotisserie chicken (flaked in food processor), potato (2/3 baked through, then peeled & into the food processor to make tiny pieces), WF frozen chopped spinach, toasted onion, organic olive oil, potato starch, salt, pepper. Used a melon baller to scoop the mixture into parchment paper, then baked until outside was slightly brown and crusty.

Yum city! Free of the 8 major allergens. My teenage son inhales these.
