Nourishing Thai Green Curry that is perfect for a weeknight dinner. 🍛 I’m a sucker for a good Thai dish and this recipe is one of my faves. It really is so light and vibrant from the addition of cilantro, basil and lime. 🌿 It’s also dairy-free, gluten-free and can be made grain- free by subbing regular rice for ‘cauliflower rice’ which would also make it low carb. For bonus greens, I blended in some spinach.

The best way to feel warm and balanced in the winter is by focusing your diet on more warm and nourishing foods that are in season. According to Chinese medicine, eating too many fruits and veggies can cause an imbalance in the body as these foods have cooling effects. In the winter, our bodies crave warmth and comfort. This is the time where we should focus more on soups, stews and root veg to keep that furnace stoked. Overconsumption of raw foods like salads can promote digestive issues like bloating, constipation plus feeling cold and depleted.

This is why I’m all about seasonal eating and there’s good reason for it. It gives us more nutrients, keeps us connected to the cycles of nature and in tune with our body.

In saying all this, I will eat salads in the winter here and there but not all the time. My body intuitively craves those warming foods and comfort.

Here are 4 ways you can add more warmth to your diet this winter:

1. Cook your veggies and make soups and stews.
2. Include more warming foods like root veg, cinnamon, ginger and spices like tumeric
3. Include protein w each meal as this is an excellent source of warming energy.
4. Drink water at room temperature and include herbal teas

It’s that’s time of year again... ☕️! On a cold day, what better way to warm up than with a cup of hot chocolate! This annual Calgary event is about community and supporting local businesses while feeding someone in need. A portion of proceeds from each hot chocolate sold supports Calgary Meals on Wheels! That’s an event I can get behind especially when it involves chocolate!😀

This year we tried the S'mores Hot Chocolate with a toasted house-made marshmallow, gourmet dark chocolate, cookie crumble with oat milk. The s’mores theme def brought me back to sitting around the campfire and summertime mems. How I miss that summer weather and camping under the stars. Was a nice treat and outing that we enjoyed yesterday on Family Day!

Had so much fun making this cake. 🎂 Gluten-free vegan cake for my daughters birthday that we celebrated last night. I needed a cake recipe and just at the right time my friend Heather was hosting an online Valentines vegan dessert class so I thought why not! This was the result in my own creative way as the birthday was also Valentines themed💘

The base of this cake is made from oat flour, coconut sugar, cacao powder and flax eggs. Icing is made with vegan butter and organic icing sugar + raspberry juice to give it natural colour without all those artificial dyes. Came out moist and mild in sweetness. Works great for a Valentines treat too so the celebration continues as we take this into the weekend.

Whole 30 Pad Thai with spaghetti squash! Just finished up another round of Whole 30 and this lovely dish was a big hit from . So full of flavour and nutritional value. Key ingredients include spaghetti squash, almond butter, chicken, carrots and ginger. Tbh I wasn’t always a fan of spaghetti squash but it’s really grown on me and an awesome winter veg thats in season and super nourishing. Post baby, I need all the nourishment I can get! And this past month was full of that!🤗

So much to say about spaghetti squash as its nutrients dense and rich in fiber, antioxidants like A+C, B6 and manganese. Great for supporting a healthy digestive system, immunity and weight loss goals as it’s low carb. If you have picky a toddler like I do, it’s also a sneaky way to get those veggies in. My little one just gobbled it up like it was regular noodles. 🍝

Now that I’m done, I’ll be enjoying a glass of wine and some chocolate cake this weekend as it’s my daughters birthday. I will also be sharing my ‘Whole 30 while breastfeeding’ experience + juggling two littles in a future post. So stay tuned.

KEEP GOING// There’s no doubt this past year has been brought challenges and testing for many of us. It has challenged us in many ways but has also made us stronger and more resilient. Maybe this year has tested you so much that you have dismissed your goals and even neglected things like your health. I want to tell you its ok to make time to rest when your mind and body needs it but also don’t give up. Whether it’s weight loss, a relationship, healthier eating or starting that business, keep going it will be worth it! Whenever I feel demotivated or discouraged, I always like to revisit my goals, my WHY and recall success from the past that “I’ve done it before, I can do it again.”

Sometimes we need to learn to rest vs quitting so we can keep moving forward. It could also be that our HABITS are draining us and preventing us from reaching our goals. If you’re consuming too much coffee, sugar, negative thoughts and/ or news on the daily, these habits can totally drain your energy and become a repetitive cycle if we let it.

When you feel like your energy is drained, REST. When moments become more important than a detailed plan, ENJOY them. When your body changes with each season of life: LISTEN to it, NOURISH it, RESPECT it. When you start to question your worth, remember to be gentle with yourself and give yourself GRACE. You are doing the best you can with what you have. Look how you’ve come the past 5 years, you are never starting over but instead relearning everything you gained from experience. KEEP GOING. Chocolate for breakfast? Yes please. This chocolate chia pudding hit the spot and just 4 simple ingredients. Makes for a great breakfast that is packed with healthy fats, protein and other micronutrients offering you the right energy to start your day right.

Cacao is such a powerhouse providing a rich amount of anti- oxidants, iron and magnesium! Did you know that cacao is the highest plant based source of iron and one of most nutrient dense foods on the planet!

Chia seeds are also worth loving on as they are so good for your gut and do wonders for your digestive system. They’re such a great source of fiber and omega 3s which are soothing for the gut lining and can help reduce inflammation in the body.

*An important note on chia seeds as I was talking about hydration yesterday. They can absorb up to 10-12x their weight in water due to the soluble fiber. So they should be always be soaked or softened for optimal digestion and hydration. When they are consumed dry, they can absorb water from your body (expanding in your stomach) causing you to become dehydrated and even bloated. Yikes!Bottom line: Soak those seeds. Let them sit at least 20 minutes if you’re short on time but overnight would be best!

Here’s what’s in it:
▫️1/4 cup chia seeds
▫️1/4 cup cacao
▫️1 1/2 cup coconut milk (from can)
▫️6 dates
*Blend all together and let them sit

THIRSTY THURSDAY// One of the most single best and effective things you can do for your health right now is to drink more water.💧

This is something so simple and doesn’t cost a thing but many struggle to do. Myself included, which is why I made it a goal this year to drink more water on a daily basis, especially now that I’m nursing. I’m aiming for 4L a day.

Whether you forget to drink water or can’t seem to drink enough, it can slow digestion, energy levels and even hinder weight loss goals. Ultimately, we should aim for at least 2-3L of water per day to avoid dehydration and boost our overall health at a cellular level.

Some signs you may be dehydrated:
➡️Headaches
➡️Fatigue
➡️Joint pain/stiffness
➡️Dark urine
➡️Dull skin
➡️Feeling thirsty
➡️Dizziness

Staying hydrated benefits us in so many ways by flushing out toxins, keeping our joints lubricated, increasing mental clarity and improving nutrient absorption.

If you struggle to drink enough water during the day, you are not alone. Here are some helpful tips to help you drink more water AND stay hydrated:

💧Have a large glass of water by your bed for when you wake up
💧Set reminders on your phone to drink water
💧Add flavour to your water like lemon, raspberry or cucumber
💧Add coconut water to your smoothies (full of electrolytes)
💧Eat your fruit and veg - they contain water too!
💧Buy a large water bottle and take it with you everywhere you go. I don’t leave the house without mine

PS. If you’re a coffee drinker, ☕️ you’ll also want to ensure you’re replacing those fluids and be mindful of water intake.

Weekends are better with waffles.. amirite?! 🥞 I have to say these Paleo waffles did not disappoint...light and fluffy on the inside and crispy on the outside. Also perfect to make a batch and freeze for the week ahead as well.

These waffles are made with cassava flour which comes from the yuca root which is a starchy vegetable. Cassava is a great flour substitute when you want something that its gluten free, nut free and grain free. Since I’m doing Whole 30, this was perfect. I just took out the maple syrup from the recipe but luckily these berries made for a good substitute and didn’t even notice the absence of maple syrup.

I must admit I’m a huge breakfast fan and there’s just something about waffles that make me so happy. Def a nice weekend treat and something to look forward to.

Ditch the bottle and make your own healthy salad dressing🥗 Salads make for a nice light and healthy lunch option but if you’re always using dressing from a bottle it can add up. Many dressings are are filled with artificial flavours, processed oils and contain more salt and sugar than is necessary. When you make your own dressing you’re in control of what goes in and you can customize it to your liking. A good salad dressing def goes a long way. And a balanced salad is key with healthy fats and quality protein to keep you satiated.

Day #4 of Whole 30 and today’s lunch is a chicken kale Caesar salad with avocado, cucumber, nutritional yeast, red onion with a sweet creamy ‘Caesar’ dressing. Packed with nutrients like Vit B, natural sugar and healthy fats.

Salad Dressing:
◽️3 tsp lemon juice
◽️3 dates
◽️1 tsp tahini
◽️1/3 cup olive oil
◽️1 tsp nutritional yeast
◽️1 1/2 tsp red wine vinegar
◽️1 tsp Dijon mustard
◽️1 tsp worchestire sauce
◽️2 small garlic cloves
◽️Salt and peppa to taste
