Was craving some veggies and Asian food... I’m gonna make this in a broth next time! 🥢 Baby bok choy and baby portobello mushrooms sautéed in 1 tbsp bacon drippings, 1tsp thai garlic chili sauce, a few shakes of Bragg liquid aminos, a shake of fish sauce, sea salt and pepper to taste. Rinse and cook shiritaki noodles and add an egg! Mix and done!

I’ve been through a lot these past 2 months, but I am back!

Turkey tenders with a slice of chopped onion and 1 garlic clove fried in olive oil. Seasoned with sea salt, black pepper and paprika. Salad of mixed greens, iceberg and 1 whole avocado topped with avocado oil.

I made Chicken Tender/Nuggets! They were so unbelievable! I dipped in G Hughes Sugar Free Honey Bbq sauce! See my last post for the recipe!!! I was so full also! 🙌🏽

AMAZING Chicken Tender/Nuggets 👌🏽

Crush pork rinds in a plastic bag.
I sautéed 5 brussel sprouts in 2 tbsp of bacon drippings while preparing the rest of dinner.
Cut up 1 chicken breast into pieces.
Dip in a stirred egg.
Cover in pork rinds (add some paprika, garlic and onion powder to rinds).
Take out the brussel sprouts and add some avocado oil to the fat in the pan.
Add the chicken piece by piece and fry about 4 mins on each side on medium heat.
Add spinach during last few mins in the side of the pan. Done!

I made this hummus for a 4th of July BBQ... I wouldn’t really recommend it to make at home because it is too easy to overeat. But it is a good party favor!
2 cans organic chickpeas
1\3 cup tahini paste
Pour about 1/4 cup EVOO
A half handful of parsley
4 chopped cloves of garlic
Juice of half a lemon
Himalayan salt
Purée everything in a food processor until creamy!

Beef and Creamed Spinach

1 oz organic beef
2 cups spinach
1 tbsp grass fed butter
3 oz Philadelphia Cream Cheese
Put everything in pan and sauté until meat is almost brown.
Add the cream cheese and stir until melted.
I have a pink sea salt grinder that has garlic and other spices mixed in!
I did a few grinds of that and done!

I dip them in G Hughes Sugar Free ketchup and I need a splash of tabasco sauce! I will always need my hot sauce! 😐

3 eggs
1/3 cup whipping cream
add 1 tsp drippings to pan and fold every few mins until done!
Add some shredded cheddar cheese mix!
So fluffy and filling!

I wanted something Asian and this had the taste of Mongolian beef!

Steak and Baby Bok Choy
1 half of a flank steak
2 tbsp grass fed butter
1 Baby Bok Choy
1/2 stalk of a sliced green onion
Sauté all in pan until the green onion caramelizes in the butter.
Cut the steak and pour the tasty brown sauce over it.
Grind some pink sea salt over everything. Yum!

I wanted something “Italian” since that’s what I’m used to making... but trying to eat as clean as possible. 🤔

1/3 onion fried in 2 tbsp EVOO
Add 2 oz ground beef
Sprinkle oregano, basil and garlic powder
1/3 diced tomato
Mix all together until brown then add 1/3 cup of shredded mozzarella on top.
Few pieces romaine and add the oil from pan for dressing.
(I didn’t eat most of the onions and just used them for taste mostly.)
DELIZIOSO!

I love the fact that I can always use the rest of the oil in the pan to add on top of some greens with a splash of ACV to make an oil and vinegar salad! I avoid any bottled dressings and try to eat very clean.

Salmon and Asparagus 🙌🏽
Sauté asparagus in 3 tbsp EVOO
1 salmon filet added to pan for few mins
Sprinkle with Himalayan salt and pepper
Squeeze 1 slice of lemon
1/2 cup of spring mix leftover oil on top with a splash of ACV

Steak and garlic Zoodles 🍽

Flank steak cooked with 2tsp of grass fed butter
Zucchini noodles fried in leftover bacon fat and 1 clove of garlic
I sprinkled onion powder and used Himalayan pink salt on everything.

Homemade Bone Broth

1 package of Oxtails
4 cloves of garlic
3 broken stalks of celery
2 bay leaves
1 white onion
Put all in crockpot and cover over ingredients with water. Put the crockpot on low for 2 days. Stir and add a little more water after day 1.

The bones will be dry and the delicious meat will fall right off! Discard everything else but the broth. Strain into a container and let sit in fridge. Hard white Tallow will form on top once chilled. Scrape that off and save to use as a cooking fat. Freeze any broth or tallow if not going to be used within a few days!

Crispy Chicken Leg Quarters with Asparagus

3 Chicken Leg Quarters
1tsp of grass fed butter on each
3 Cloves of Garlic cut in halves, (stuff under the skin of the chickens)
Add dried Paprika
Sprinkle Parsley
Pepper to taste
Bake at 350 for an hr, at half hr baste the oil on top of chicken. Add the asparagus and cook for an addition half hour at 350. Chicken will be crispy and tender!
