Oat and yoghurt crêpes

Ingredients and method:

1. Grind 2/3 cup oats in a food processor/ blender.

2. Add and mix 2 eggs and 3 tbsp plain yoghurt.

3. Add few drops of vanilla (sugar is optional).

4. Cook on a non stick frying pan.

5. Serve with fruit of your choice, some nuts &/ seeds and yoghurt. Drizzle some honey over the pancakes if not suger was used with the mixture.

** A great idea for breakfast or dessert.

** One can use chia seeds instead of eggs. 1 egg is equivalent to 1 tbsp chai seeds and 2.5 tbsp water.

Grilled Marrows & Halloumi

Preparation time: 5 minutes

Ingredients & method:

Grill the marrows & halloumi.
Slice tomatoes 🍅 and avocado 🥑 ( add any vegetables you have at home)

Serve with pita bread and hummus (you can serve also with tzatziki or tuna dip).

Yoghurt & Pecan Cake with pistachio cream drizzle

Ingredients and method:

Follow the all-in one method of cake making.

1. In a bowl mix:

🔸2 eggs (room temperature)
🔸1 1/2 cup self-raising flour
🔸1/2 cup demerara sugar
🔸1/2 cup oil
🔸3/4 yoghurt (natural/Greek etc)
🔸1 tsp vanilla essence
🔸1 tsp baking powder
🔸Dash of salt

2. Pour into a cake tin.

3. Sprinkle some crushed pecans and cook in a preheated oven (180°C) for about 35 minutes.

3. Once cool drizzle some honey and/or pistachio cream.

You just need:

Ricotta and blueberry cake 😋😋

One bowl recipe:

- Whisk 3 eggs.
- Add and mix well 100 grams demerara sugar, 1/3 cup olive oil, 250 grams ricotta, 1 tsp vanilla and 1 tsp lemon juice.
- Then add 200 grams self raising flour, 2 tsp baking powder and 1/2 tsp salt.
- Pour in a oven cake tray and top with blueberries.
- Bake in a pre heated oven of 180°C for approximately 40 minutes.

My all time favorite pie!
Ricotta, spinach and broad beans 😋😋

Method and ingredients:
-Beat 3 eggs
-Add and mix 500 grams ricotta, some grated cheese, season with salt & pepper
-Add 100 grams raw baby spinach and a handful of peeled beans.

You can do your own pastry or buy ready made.

Bake in a preheated oven at 200°C until golden (approx 25 minutes).

🍴🍴Chicken breast roulade 🍴🍴

Method and ingredients:

1. Use: baby spinach leaves, sundried tomatoes, goat cheese and mushrooms.

2. Use: prosciutto, edam cheese, sundried tomatoes and mushrooms.

Season the chicken breast and then place the ingredients on top and roll. Bake in a preheated oven for about 20 minutes. You can cover the baking dish and uncover it in the last five minutes.

🔸To keep the chicken breast from drying we rolled one roulade with bacon🥓 and the other with flour, then and egg🥚 and then breadcrumbs. This also helps to keep the cheese in the roulade.

🔸It is very important to use a meat mallet to flatten the chicken breast evenly. Apart from tenderising the chicken breast, this will make it easier to roll the chicken breast.

Ingredients and Method:

Mix 3 cups cooked quinoa, some cherry tomatoes, finely diced mushrooms, 1 onion, 2 tablespoons garlic butter and some grated cheese. Mix well.

Add two eggs and form into balls.

🥗🥗Warm chard and halloumi salad 🥗🥗

In a non stick pan cook for two minutes some fresh chard leaves. Place on a plate.

Then cook for a couple of minutes some spring onions and cherry tomatoes ( can leave the cherry tomatoes raw). Place on top of the chard.

Than use a grill pan or the same frying pan and cook the halloumi until softened. Sprinkle some black sesame seeds and enjoy😊

🔸🔸 When cooked, the chard will have a mild sweet taste. If left raw, it is lightly bitter but still extremely good.🔸🔸

Falafel with 🥑 guacamole 🥑

Falafel:
- Beat 2 eggs, add 3 finely diced garlic cloves, salt and 1 tsp cayenne pepper.
- Add 200 grams of hummus and mix well.
- Add breadcrumbs until the mixture thickens enough to form into balls.
- Dip in flour and cook over a non stick pan until golden.

Guacamole 🥑
- Mash 1 avocado and add 2 diced garlic cloves.
- Grate 1/4 of a medium lemon and then add it's zest.

This was served along a 🥗 for lunch.

*Makes 25 small pieces

Method and ingredients.

1. Combine together:
🔸 500g pure ground almond
🔸 160g demerara sugar
🔸1 lemon zest
🔸1/2 tsp cinnamon, mixed spice and cloves

2. Blend in and form into pastry;
🔸3 eggs
🔸1 lemon juice
🔸2 tbsp anisette /zamuba and/or orange flower water.

3. Roll into cylinders and flatten with your palm.

4. Cook in a preheated (180°C)) for 10-12 minutes.

5. Spread some honey and roasted almond flakes.

* You can make your own ground almond from whole almonds / use substitute/ mix both together.

Lunch/Dinner ideas 👌

Rice, oven backed chicken loin and grilled asparagus 😋.

Method:
- Pre-heat oven at 180°C.
- Dip the chicken loins in a beaten egg and then in flour.
- Cook chicken in a non stick tray for approximately 25 minutes (flip over mid way).
- Put asparagus in a oven dish with some margarine and grill until golden.
- In the meantime cook the rice.
- Cook one diced onion in a pan. When golden remove from heat and cook eggs (scrambled).
- Mix the eggs, onions and rice together in the pan, add some Worcestershire sauce and cook for a further few minutes.

*Use any breakfast cereals from your cupboard.

Ingredients and Method:

1. Cover 600grams of breakfast cereals with milk.

2. Leave to soak until soft. When soft, add:
1tsp cinnamon
Shredded coconut 🥥
Currents
2 tbsp cacoa
Roasted cashes
Walnuts
(When no amount is indicated, add according to your likings. Do not add too much coconut as it will make the mixture dry.)

3. Mix well and add two eggs. Pour into a baking dish and sprinkle some pumpkin seeds and almond flakes.

4. Bake in a preheated oven (180°C) for about 40 minutes.

* Do not add cacoa if you added chocolate breakfast cereal.

* You can add some sugar if you used only high in fibre breakfast cereals such as weetabix and oats.
