VEGETARIAN GARLIC BUTTER MUSHROOM

Ingredients :

3 stalks king oyster mushroom (Pleurotus eryngii)(cut into biteable pieces)
6-8 cloves garlic (minced fine)
2 tbsps (heaped) butter
1-2 tbsp mushroom powder

Method :

Heat pan and add butter. When butter melts, add in garlic and fry till fragrant. Pour in the chopped mushroom and stir fry till the mushroom is cooked. Sprinkle the mushroom powder and mix thoroughly. You may add a little water if preferred.

Enjoy!

GINGER LEMONGRASS PANDAN TEA
(for detox and general health)

Ingredients :

8 - 10 stalks lemongrass
1" or 2" old ginger
8 - 10 pcs screwpine leaves
2.6 litres water

Method :

Wash and remove the outer layers of lemongrass. Cut into 5" - 6". Wash and scrub clean the outer skin of ginger with a brush. Cut into half. Crush lemongrass and ginger with a mortar and pestle or a heavy knife. Wash screwpine leaves and tear into thin strips. Tie into a knot.

Place all ingredients into a pot and bring to boil over high heat. Lower fire to medium low and simmer for another 45 mins.

Turn off fire and transfer the water into a hot flask. Sip the warm tea through the day.

Note : You may add some syrup, honey or rock sugar for taste (optional).

Inherited Pudding Recipe

1 full can of Ideal Milk
1 big can of lychee/longan/pineapple/mixed fruits/peaches
2-3 tbsp of sugar
2tbsp custard

Pour all ingredients into a pot and bring to boil. Medium or slow fire. Keep stirring till mixture gets thickened. Once done, off the stove and transfer mixture to desired containers. Let them cool at room temperature. Add a tablespoon of jelly on top of the pudding n refrigerate it for few hours. There you go. Easy pudding recipe.

STIR-FRY MIX VEGETABLES WITH
FERMENTED RED BEAN CURD
(Chinese)

Ingredients :

2-3 sections lotus root (cut into small pieces)
10-12 pcs french beans (cut into small pieces)
6-7 pcs dried cloud ears (black bok nee)
(soak to soften and cut into small pieces)
6 pcs garlic (cut fine)
1 pc fermented red bean curd
Sugar and salt to taste
1 cup water

Method :

Heat oil in wok and sauté garlic till fragrant. Add in cloud ears and toss for a minute. Add in lotus root and french beans and continue to toss for another minute. Add in water and allow to simmer. Dissolve fermented red bean curd into the water. Adjust seasoning.

VEGAN MIDNIGHT SOUP (ala Mamak Mutton Soup)

Ingredients

Olive oil
2 short cinnamon sticks
6 cardamom pods
6 cloves
1 teaspoon fennel seeds
Onion, sliced
Curry leaves
500g cubed tofu, or mock meat
2 teaspoon ginger paste
2 teaspoon garlic paste
1 teaspoon turmeric powder
2 tablespoon meat curry powder
1/2 cube organic vegetable stock cube
6 cups water
1 russet potato, peeled and cubed
1 carrot, cubed
5 sh*take mushrooms, sliced
3/4 cup coriander leaves
Salt and pepper to taste

Method

1. Heat oil and fry the cinnamon, cardamoms, cloves and fennel until aromatic. Add the onions, mushrooms and curry leaves and stir fry till tender and fragrant.
2. Add the vegetables and protein, ginger and garlic pastes, spice powders, stock cube and water. Bring to boil then simmer over low heat until the potatoes are tender.
3. Add the herbs, salt and pepper before the end of the cooking.

Recipe for a Happy New Year!!!


Take twelve fine, full-grown months; see that these are thoroughly free from old memories of bitterness, rancor and hate, cleanse them completely from every clinging spite; pick off all specks of pettiness and littleness; in short, see that these months are freed from all the past—have them fresh and clean as when they first came from the great storehouse of Time. Cut these months into thirty or thirty-one equal parts. Do not attempt to make up the whole batch at one time (so many persons spoil the entire lot this way) but prepare one day at a time.

Into each day put equal parts of faith, patience, courage, work (some people omit this ingredient and so spoil the flavor of the rest), hope, fidelity, liberality, kindness, rest (leaving this out is like leaving the oil out of the salad dressing— don’t do it), prayer, meditation, and one well-selected resolution. Put in about one teaspoonful of good spirits, a dash of fun, a pinch of folly, a sprinkling of play, and a heaping cupful of good humour.

VEGETARIAN SAMBAL (Chilli)
(Fusion)


Ingredients :

10 red chilli
5 bird's eye chilli (or more if you prefer spicy)
2 tomatoes (cut into quarters)
2 large onions (cut into quarters)
6 - 7 cloves garlic
Sugar (to taste)
Sweet thick soy sauce


Method :

Place red chilli, bird's eye chilli, tomatoes, onions and garlic into a blender. Blend into paste.

Heat a little oil in wok. Pour in the paste and fry till fragrant. Add sugar and sweet soy sauce. Fry for another half minute.

Cool and serve with noodles or any of your favourite food. May be refrigerated for a couple of weeks.
