The recipe of the month for May is Frutas con Crema (Fruits with Cream). With 4 simple ingredients you are on your way to a simple, sweet and nutritious treat. Strawberries are the featured fruit but you can add whatever you have available, fresh, canned or frozen. I added some chopped pecans for a tasty crunch. This week, the Better Living for Texans (BLT) program presented at Baylor Collaborative on Hunger and Poverty’s Together at the Table: Hunger and Poverty Summit at a breakout session called Better Together: Programs, People, & Partnerships. We shared about the 30-year impact of the BLT program and how it has been made possible by developing statewide and local relationships that foster strong local programs, partnerships, and collaboration to improve food security. The session was then followed by a panel with the local McLennan County BLT Extension agent and one of their local partnerships, the Family of Faith church. During this panel, the notion of being Better Together truly shined through while highlighting a recent nutrition and food demonstration program that included recipes from the church’s food distribution.
