happy FRIDAY everyone! you know what that means.. time to clean out the fridge before weekend grocery shopping. today’s lunch bowl: quinoa, made with almond milk + cumin (fav spice ever). in my cast iron skillet I threw on sweet potatoes, kale + multi-colored tomatoes, and a scoop of coconut oil. put it in a big bowl and topped it with more cumin and h**p hearts! so nice to eat outside and enjoy the weather with my four-legged fur baby 🐾

avoiding fruit because of the sugar? this is a common misconception + here are some reasons why you shouldn’t avoid eating fruit. whole fruits are an excellent source of antioxidants and fiber. fiber helps you feel full, it can help cut your “bad” cholesterol, and it’s important for digestion. fruit is packed with minerals, vitamins, and nutrients that are essential to our bodies. our brain needs natural sugars in the form of glucose to function properly + our muscles need these same natural sugars to perform exercise. natural sugar found in fruit is not bad for you! 🍎🍇🍌🍓

i hopped on the sweet potato toast train and i’m loving every minute of it. plus it’s super easy! how to: simply slice a piece or two of sweet potato about 1/2 inch thick and pop it in the toaster 3-5x (or until browned). then add your favorite toppings 😋. i topped mine with coconut kefir cream, beets, baby arugula, wild pink salmon, and fresh dill. the perfect meal if you’re in a rush and looking for “fast food.”
