Good morning everyone! Happy Monday!
Start your day out right....and think about what's for dinner! I spent some time this a.m. chopping/peeling veggies with my girls to get my soup ready!
I make this often, but it's so GOOD!
And EASY!
Chicken Wild Rice Soup...tons of Organic Carrots, Organic Celery, Uncle Ben's Wild Rice, 2-cups of water, pepper, salt, Organic Chicken Broth and a Rotisserie Chicken (homemade or store bought). You can make this creamy too if you want but I can't eat dairy like I used too so we stick to a delicious broth!
Stir it all together and getting a nice heat to get veggies soft in a big pot and tada! So yummy!
NOTE: IF you do a creamy base, its just 2-cups of heavy cream or skim milk (I would do a cup of each so it still gets thicker), 6-TBSP Butter and 1/2 cup of Flour...stirred together butter melted and flour and mix in flour....then add crean mixture constantly stirring. Then once its thicker, you pour it in with the veggies and broth and still together at a low heat.
