Made this delicious dinner the other day. Boneless skinless chicken breasts stuffed with tomato basil goat cheese, then wrapped with prosciutto. Plus a mixed salad and baked fresh chopped broccoli 🥦 topped with veggie seasonings, extra virgin olive oil, salt, pepper and garlic! Yummy!

A shout out to Tiffany Vorpagel for the delicious Epicure SPG Seasoning! Delicious in my homemade Chicken Wild Rice Soup loaded with celery and carrots! Any veggies will do of course but the family loves this!! So easy to do too!

1-Rotisserie Chicken OR Boneless Skinless Chicken (*desired amount)

1-Box of Wild Rice (*I used Uncle Ben's but lots of options here)

Organic Celery chopped

Organic Carrots chopped

Organic Low Sodium Chicken Broth 4-cups

2-cups of water

Salt and Pepper OR SPG Seasoning (Epicure)

Garlic to taste

Tada!! That's it! I cook the rice, then add it to my broth, water, chicken, carrots and celery. I also add my spices to the broth/water before I put in the veggies and chicken so it soaks into the ingredients as they are added :)

Yummy!

Supper prep for tonight! Making a Broccoli 🥦 Keto Beef Stew recipe from my new Instant Pot Recipe Book I got from my mother in law for Christmas! So excited to see how it turns out!

Note: I am going to brown my meat in the cast iron pan before I put it on "Stew" in my Instant Pot vs. using the Sauté option on my Instant Pot. Also I marinated my meat just to add some fun flavor and help get the stew meat tender :) .

Good morning everyone! Happy Monday!

Start your day out right....and think about what's for dinner! I spent some time this a.m. chopping/peeling veggies with my girls to get my soup ready!

I make this often, but it's so GOOD!

And EASY!

Chicken Wild Rice Soup...tons of Organic Carrots, Organic Celery, Uncle Ben's Wild Rice, 2-cups of water, pepper, salt, Organic Chicken Broth and a Rotisserie Chicken (homemade or store bought). You can make this creamy too if you want but I can't eat dairy like I used too so we stick to a delicious broth!

Stir it all together and getting a nice heat to get veggies soft in a big pot and tada! So yummy!

NOTE: IF you do a creamy base, its just 2-cups of heavy cream or skim milk (I would do a cup of each so it still gets thicker), 6-TBSP Butter and 1/2 cup of Flour...stirred together butter melted and flour and mix in flour....then add crean mixture constantly stirring. Then once its thicker, you pour it in with the veggies and broth and still together at a low heat.

Delicious supper last night! Whole Beef Tenderloin seasoned with yummy spices along with a tray of fresh cut sweet potatoes, carrots and onions! So good!! Searing the meat and then baking at 425-degrees for 15-minutes was the perfect way to cook this! Just make sure it reaches 140-degrees! Veggies cooked for 45-minutes at the same temp!
Baked veggies and lean cuts of meat....yum! :)

GREAT way to start my day! Pi-Yo Workout with all my girls! We even did 2-segments which in total was 50-minutes! That's awesome! I may have finished with just Sammy and I, but Lucy and Elise rocked the whole first 30-minute segment for Core! Sammy loved the HIIT segment we finished with :)
I love sharing my passion for fitness with my family! It makes me so happy that they love to move their bodies too!

Just a mat and weights and we worked our butts off! So.Much.FUN! I LOVE to teach and create every class! Plus I had my favorite little humans with me tonight...my middle little missed the pic as she was getting more supplies! I love sharing my work with my girls and teaching them to take care of your body! They always keep it interesting as does my awesome Tuesday Bootcamp group! They are an honor to teach every week!

Happy Monday everyone!

I had a fantastic class today teaching my Power Yogalates! I love being able to mix Pilates, Strength and Basic Yoga moves! I used the Bender ball, DB and Resistance Bands today! It is truly my favorite day of the week as I just love to see my class improve every week! Plus they have lots of s***k and personality which makes us all smile!

What do you do after a day of hiking and being outside? Make homemade pizzas! Baked chicken, onions, tomatoes, goat cheese and a drizzle of cheddar cheese...tada! All done! Super thin crust and its delicious! Time to enjoy!
