Roasted up these veggies a few times while originally anticipating a possible direct hit from Hurricane Ian. ⁣

It was a strange feeling to be relieved that we weren’t going to be directly hit, while knowing our more southern coastal neighbors would be impacted at an even greater force than we were likely to receive. The damage they ultimately endured is tremendous. 💔 I’m so thankful that my friends and family across Florida are safe. ⁣

Leftovers from yesterday’s pretty lettuce boats for dinner. 🥬 🚤 There’s just never enough larger pieces of romaine to enjoy eating by hand (or ‘boat’) for very long, so here we are with the the same sh**, but chopped up, in a bowl. 🥣 ⁣

During pregnancy and early postpartum, I was great at getting fish into my diet at least 2x/week. Lately, I’ve been working on staying consistent again with this and an easy way to do so is incorporating tuna salad for lunch or snack!⁣

Fatty fish (like tuna, salmon, freshwater trout, cod, sardines…) are excellent sources of omega-3 fatty acids, which support combating inflammation in the body that can wreak havoc on our heart, cognitive, and skin health. ⁣

Notable: opting for ‘light’ tuna (-vs- albacore), skipjack tuna, or even wild caught salmon to make your ‘tuna salad’ are great options with lower bioaccumulation of mercury. 🐟 ⁣

Mommy & me mealtime. 😋⁣

Made myself a salad with spinach, beets, blueberries, chicken, feta, pepitas, slivered almonds, and a berry vinaigrette (salad dressing recipe in comments). ⁣

For the babe, I made a few small adjustments so everything was developmentally appropriate (see below ⬇️). ⁣Jax is currently working on his ‘pincer grasp’ (index & thumb), but still uses his ‘palmer grasp’ (full hand) for the majority of his foods. We also use utensils (i.e. a preloaded fork, spoon, or “GOOtensil”), so he can work on a variety of self-feeding skills! ⁣

💚 Chicken - shredded ⁣
💚 Spinach - chopped and sautéed
💚 Beets - cut into strips ⁣
💚 Blueberries - quartered (circular shape taken out)
💚 Dressing - without salt (added to dip chicken in and let baby taste) ⁣

❌ Skipped the feta (due to higher sodium content, plus he already had plenty to choose from lol) ⁣
❌ Skipped adding seasonings with salt/sodium and additives during preparation; also used fresh, non-pickled beets ⁣
❌ No nuts/seeds due to inappropriate, hard texture ⁣

I added way too much food on his plate, but he tends to toss a good amount on the floor, so it all worked out. ⁣

Did your mom (or primary caregiver) also over feed you??? 😅🤪⁣
