All recipes will be:
♥ low carb, as I am eating 20-24 net carbs a day.
♥ high fat, because without carbs, your body will burn fat.
♥ gluten-free/wheat-free/grain-free, as I am unable to tolerate gluten or wheat.
♥ diabetic-safe, though some might prefer to use an artificial sweetener instead
♥ low sugar, using monkfruit, because I will not eat artificial sugar (which started out as insecticide)

mostly single servings because I am the only one in my family on this diet, and there is less risk of overeating, if there is nothing left.
♥ easy and quick to make, because yes, I am lazy
♥ good tasting - because this is a lifestyle, not a short term diet!

3-Ingredient Keto Coconut Macaroons
(Gluten-free, Sugar-Free, Easy)
I made these today and thought I would share! They are light and crisp on the outside, and yet moist, chewy and sweet on the inside!

How to make keto coconut cookies (Step-by-step)
Ingredients
3 egg whites medium-sized, at room temperature
2 cups of shredded coconut
1/3 cup Sweetener (I used monkfruit)

1. Preheat your oven to 320°F (160°C). Line a large baking sheet with parchment or baking paper.
2. Separate egg whites from egg yolks and put all the whites into a large bowl.
3. Whisk with a hand mixer until the egg whites have stiff peaks. This should take about 3-5 minutes.
4. Fold in the desiccated coconut and sweetener to the egg whites being careful not to over mix too much.
5. Take a 1 tablespoon cookie scoop and with that, scoop out small portions of the cookies, shaping them into balls as you go. This recipe should make about 20 coconut cookies. Place them on your tray with about 1/2 inch in between each macaroon. (As they don’t contain any baking powder, they won’t rise much so don’t worry about leaving big gaps.
6. Bake for 17-20 minutes until they are golden and crispy.
