Just picked up some nettles from the farmerโ€™s co-op, so I will be making this delish soup this weekend. Honestly one of my favorites. (I omit the heavy cream๐Ÿ˜Š)

๐•Š๐•–๐•’๐•ค๐• ๐•Ÿ๐•’๐• โ„•๐•–๐•ฅ๐•ฅ๐•๐•– ๐•Š๐• ๐•ฆ๐•ก โ„๐•–๐•”๐•š๐•ก๐•–:
๐ŸŒฑ1/2 large shopping bag of fresh nettle tops
๐ŸŒฑSalt
๐ŸŒฑ1 tablespoon extra virgin olive oil
๐ŸŒฑ1 teaspoon ghee
๐ŸŒฑ1/2 cup chopped shallots
๐ŸŒฑ1 pound potatoes, peeled and chopped
๐ŸŒฑ1 to 2 cups water
๐ŸŒฑ1 bay leaf
๐ŸŒฑ1 teaspoon dried thyme (or a couple sprigs of fresh thyme)
๐ŸŒฑFreshly ground black pepper
๐ŸŒฑ1 1/2 tablespoons lemon juice
๐ŸŒฑ2 to 3 tablespoons heavy whipping cream

๐”ป๐•š๐•ฃ๐•–๐•”๐•ฅ๐•š๐• ๐•Ÿ๐•ค:
๐ŸŒฑProtect your hands and blanch the nettles for about 2 minutes.
๐ŸŒฑShock the nettles in an ice bath, and remove large stems.
๐ŸŒฑIn a pot, sautรฉ the shallots in olive oil until soft.
๐ŸŒฑAdd the potatoes, thyme, bay leaf, chicken stock and salt to taste. Simmer.
๐ŸŒฑWhile simmering, chop the blanched nettles and add four cups to the simmering pot. Add just enough water to cover ingredients.
๐ŸŒฑSimmer until potatoes are soft, about 15-20 minutes.
๐ŸŒฑRemove the bay leaf and thyme sprigs and puree the soup.
๐ŸŒฑTo taste add salt, pepper, lemon and heavy cream if desired.
๐ŸŒฑEnjoy.

Enjoy this simple, cozy recipe to bring warmth to your mind and body.

๐Ÿ‚4 apples, cored, chopped and peeled
๐Ÿ‚1/4 tsp nutmeg
๐Ÿ‚1/4 tsp cinnamon
๐Ÿ‚1/4 tsp whole cloves

Add chopped apples and spices to a large pot and cover with water plus about 2 inches.

Simmer for one hour, strain and enjoy.

Fall is a time of transition where nature starts to release and rest, and the atmosphere is flooded with the qualities of Vata.

Vata season qualities include :
๐Ÿ‚Dry, windy, rough air
๐Ÿ‚Cooler temperatures
๐Ÿ‚Erratic atmosphere

Our external environmental factors influence our minds and bodies by increasing those same qualities within our body and mind. This time of year can be depleting if we aren't careful, and this depletion can trigger illness.
