My current go-to for a no-cook balanced & tasty meal in a pinch 💛
5 min “Everything” Salad
Protein & complex carbs: pre-cooked chickpeas & quinoa
Produce: carrots, cucumber, tomato, peppers, celery, avocado, apple, parsley
Dressing: olive oil, mustard, lemon juice, s&p
Prep a big batch over the weekend to have for weekday lunches, sides, in wraps or even as a dip with chips 🤗
