A sweet take on these minimal ingredient, and friendly tortillas 😋


How to make:

⁣How to Make ➡️⁣
⁣✔️ 1/2 cup cooked cauliflower rice (I use frozen bags)⁣
⁣✔️ 2 tbsp nut butter of choice (without palm oils or refined sugars)⁣
⁣✔️ 1 scoop collagen or vegan protein powder (I use vanilla collagen)⁣
⁣✔️ 2 tbsp ground flax seeds⁣
⁣✔️1/4 cup almond milk (add more if needed)⁣
⁣✔️ 1/2 chopped apple⁣
⁣✔️ cinnamon to taste ⁣
⁣✔️ Combine ingredients on stovetop over low heat until thick consistency forms. Optional: Top with fruit, nut butter, chopped nuts and/or monkfruit maple syrup (I used ) ⁣

⁣- 6 eggs or vegan eggs made of chia, flax or psyllium husk⁣

⁣- 1/4 cup ground flax seeds⁣
⁣- 1 tsp baking soda⁣
⁣- splash of apple cider vinegar⁣

Easy Strawberry Shortcake (using cake mix) with Cream Cheese Frosting 🧁 🍓🥧


For The Cake 🍰
- 1 box vanilla almond flour cake


For The Frosting 🧁
- 8 oz container plain almond milk cream cheese
- 1/2 cup monkfruit powdered sugar () or organic powdered sugar
- 1/2 tsp pure vanilla extract
- 1 tbsp nut milk of choice
- Mix together with blender or hand mixer until fluffy. Once cake has cooled, top with cream cheese frosting and place in fridge for one hour before adding strawberries.


For The Strawberries 🍓
- 2 cups fresh or frozen diced strawberries
- 1/4 cup monkfruit maple syrup () or regular organic maple syrup
- 1/4 cup monkfruit granulated sugar () or coconut sugar (optional)
- 1 tbsp fresh lemon juice
- sauté on low heat until thick consistency forms. Pour over frosted cake and garnish with graham cracker crumbs (optional)

How To Make:
1️⃣ microwave plantain tortillas for 15-30 seconds (or until they start to curl up) then bake on 350 for 10 minutes (or until crispy)
2️⃣ mix eggs (or egg option) with a little unsweetened almond milk and sauté in avocado oil, sea salt & pepper 🍳 sauté spinach in the same in a separate pan
3️⃣ spread almond milk cream cheese on crispy tortillas, and top with cooked eggs, spinach, uncured turkey bacon and vegan cheese (I used mozzarella). Drizzle with paleo hot sauce (I used ) 😋

For the cupcakes:
- 1 3/4 cup fine almond flour
- 1/3 cup monkfruit maple syrup
- 1/4 cup ground chia seeds
- 2 scoops vanilla collagen (optional - I use )
- 1/4 cup monkfruit classic sweetener or brown sugar
- 1/3 cup vegan butter (I use )
- 1/4 cup Greek style almond milk yogurt

~1/2 Cup Paleo Chocolate Chips or Chocolate Bar (I used Pascha 85% Dark Chocolate Chips)
~ 1/2 Cup Unsweetened Cocoa Powder
~ 1/4 Cup Coconut Oil
~ 1/2 Cup Paleo Baking Flour or Almond Flour
~ 2-3 Tbsp Collagen Powder (can do plant based version for , optional)
~ 1/4 Cup Almond Butter
~ 1/4 Tsp Baking Soda
~ 1/2 Cup Unsweetened Apple Sauce
~ 1/2 Cup Coconut Sugar or Monkfruit Sugar (Use Monkfuit for Keto)
~ Pinch of Sea Salt
~ 1/2 Cup Chocolate Chips (I used 85%)

Butternut Squash & Quinoa Salad (high in protein & fiber):
▪️ cubed butternut squash
▪️ tri-color quinoa blend (dry in bag)
▪️ dry roasted, unsalted pecan halves
▪️ Golden raisin, cranberry and blueberry blend


1️⃣. Preheat oven to 400F. Mixed butternut squash in bowl with coconut oil, sea salt and pepper. Bake for 30-40 mins (or until desired consistency).
2️⃣. In large sauce pan, bring water to a bowl (6 cups water for every 1 cup dry quinoa). Once boiling, add quinoa and simmer until all water has absorbed.
3️⃣. Allow both the butternut squash and quinoa to cool in refrigerator before combining (to avoid the squash falling apart). Once cool, combine quinoa and butternut squash in large bowl, then add 1 bag pecan halves and dried berry blend to taste.
4️⃣. Drizzle with 1/2 cup melted coconut oil, coconut palm syrup (optional), sea salt and black pepper mixture and mix throughly.
5️⃣. Serve cold (Serves 12-15 People)
