Why does picked unripe fruit ripen?

Because it produces the ripening hormone itself, without the participation of the mother plant

The ripening of vegetables and fruits occurs under the influence of ethylene. This natural plant hormone was discovered in 1912 by Russian botanist Dmitry Nelyubov. Since the gas is produced by the fruit itself, the fruit does not need to hang on the branch. A picked fruit can ripen even faster than an unpicked one, since with a lack of moisture, the release of ethylene increases. And if you put at least one ripe fruit or vegetable among unripe fruits or vegetables, then ripening will go even faster - it releases more ethylene than an unripe fruit.

For commercial use, vegetables and fruits are usually harvested unripe. They arrive on the way to their destination. For this purpose, transport vehicles are equipped with special cabins into which ethylene is dosed. Thus, about 95% of fruits sold in Russia during the winter months are processed in such chambers.
