Some of the best things about fall are the crunchy leaves, crisp air, and freshly-baked goods! If you're in the mood to bake, try making this delicious, CSD-friendly zucchini bread recipe. Its low-sugar, dairy-free ingredients make it the perfect dessert that will satisfy your sweet tooth.

ZUCCHINI BREAD RECIPE

Ingredients
3 eggs (beaten)
1 cup of unsweetened applesauce
⅔ cup of honey or maple syrup
2 cups of grated zucchini (1 large zucchini)
1 ¼ tsp of baking soda
¼ tsp of baking powder
3 tsp of cinnamon
½ tsp of nutmeg
1 tsp of vanilla extract
1 tsp of salt
3 cups of white all-purpose flour

Directions
1. Preheat the oven to 350°F.
2. Spray two 9” x 5” loaf pans with nonstick cooking spray, or use nonstick pans to
prevent the bread from sticking.
3. In a large bowl or stand mixer, combine the eggs, applesauce, and honey (or maple
syrup). Whisk until combined.
4. Stir in the zucchini and vanilla.
5. In a separate bowl, combine the flour, salt, cinnamon, baking powder, and baking soda.
6. Using a mesh strainer, sift the dry ingredients into the zucchini mixture. Stir until combined.
7. Pour the batter into the loaf pans.
8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread stand for 10 minutes before removing from the pan.
9. After removing, let it cool for 15-20 minutes before serving.

Taking a light walk for 15-30 minutes a couple of days a week is a great way for you to get some sun and steps in. Remember, too much exercise can trigger your symptoms...so be sure to keep it light. If you have someone who you enjoy going on light walks with, share this with them!

Looking for an easy, crunchy side dish to bring to your next summer cookout? Try this recipe for homemade baked potato chips that are low in sugar and fats, making them delicious and, most importantly, an unlikely trigger for your symptoms.

EASY BAKED POTATO CHIPS RECIPE

Ingredients
4 large potatoes (sweet, russet, or gold; peeled)
½ Tbsp of canola oil
½ Tbsp of dried rosemary
Salt and pepper (to taste)

Directions
1. Slice the potatoes into chips or fries, whichever you prefer.
2. Bring a pot of lightly salted water to a boil.
3. Add the potatoes and boil for 15 minutes.
4. Drain and set aside.
5. Preheat the oven to 350°F and coat a baking sheet with nonstick cooking spray.
6. Spread the potatoes in a single layer on the baking sheet.
7. Lightly drizzle with oil.
8. Sprinkle evenly with rosemary.
9. Bake for 15 minutes.
10. Flip and bake for another 25 minutes.
11. When potato chips are finished baking, sprinkle with salt and pepper.

Trying to find meal options that may not trigger your CSD symptoms can be a bit overwhelming. When planning your next lunch, try this delicious recipe for Greek yogurt chicken salad! Not only is this recipe tasty, but it’s also packed with protein and low in fats and sugar, making it CSD-friendly.

GREEK YOGURT CHICKEN SALAD RECIPE

Ingredients
4 boneless, skinless chicken breasts
½ cup of nonfat Greek yogurt
3 celery stalks (peeled, steamed, and finely chopped)
½ tsp of curry powder
Salt and pepper

Directions
1. Lightly season the chicken with salt.
2. In a large pan or pot, cover the chicken with water and bring to a boil.
3. Cover and reduce to a simmer. Cook for 15–20 minutes, or until chicken is cooked through.
4. Remove the chicken from the liquid and let it cool.
5. Using 2 forks, pull apart the chicken to shred it. Set aside.
6. In a medium bowl, whisk together the Greek yogurt and curry powder. Season with salt and pepper to your liking.
7. Combine the chicken, celery, and curry-yogurt sauce. Toss gently.
8. Serve on bread with lettuce for a sandwich or on crackers for a snack.
