Carrot Ginger Soup with Anti-Inflammatory Turmeric

Veggies get steamed ; then blended with warm spices and savory bone or veg broth for a creamy carrot and ginger soup bursting with flavor. Steaming keeps glycemic index down, less concentrated sugars, more beta carotene absorbed and most / more nutrients protected.

Ingredients
1½ lb carrots, peeled and chopped
1 medium onion, diced
2 garlic cloves
1 T extra virgin olive oil
2 t ginger, freshly grated
1 t turmeric
2 cups chicken bone broth, divided or Veggie broth
1 cup coconut milk
Salt and pepper, to taste

Instructions

Arrange the carrots, onions and garlic cloves in a large, steamer. Season with salt and pepper and use a little olive oil after the steam. Steam to soften for about 20 minutes, or until fork tender. Remove and set aside.
Once cooled enough to touch, add the veggies to a food processor with the grated ginger, turmeric and half the chicken bone broth. Blend until smooth, then add the other half of the bone broth and the coconut milk. Blend until combined.
Transfer the soup to a heavy-bottomed saucepan over medium heat until heated through. Ladle into serving bowls and enjoy!
